Firecracker Crackers

made these for a work carry in- took about 1 min prep time and cost 1.99 for the box of store brand club crackers- as I had every thing else at home. Most people bring in dips/ spreads and these were the perfect paring for all the salads/dips etc. crowd favorite- these will be made again and again. I pinned to my tailgating recipe board. Will take to parties/ and will be my new standard for work carry ins.

The Best Meatloaf

made it tonight for 2 picky left overs. only change is next time i will dice the onions a bit smaller, the 9 year old had a small pile of onion pieces at edge of his plate. My preperation at fault on that one, recipe itself was perfect! only modification was i added some brown sugar to remaining sauce for the top.

Whit's Chicken Enchiladas

This was the 1st recipe I ever made from and I fell in love. I made it for the 1st time 2 years ago for our christmas eve supper and it has become a family favorite. Even my mexican friends have asked me for the recipe. I make it exactly as described but I do add some prepared spanish rice to the chicken mixture just to bulk it up some and stretch the chicken further!!!

Baked Potato Soup

How can something so easy be so good?? The entire family asked it, I made a double batch and its a good thing!! Served with a green salad and out of the can biscuits it made a quick easy mean on a cold day. Not to mention I had everything on hand except for the half and half--probably could have used milk, but it was worth the trip to the store.
