Apple, Pecan, Cranberry, and Avocado Spinach Salad with Balsamic Dressing

Harvest Pumpkin Cupcakes

These were Yummy. I made these for a Halloween Party so I added a bit of orange gel to the frosting to make them look like a pumpkin. Everyone loved them.

Gramma's Apple Bread Pudding

Grilled Chipotle Skirt Steak

This was very good. I added a bit of Sazon and it made the flavors really come together. I also added cilantro and a jalapeno. It was really good. I used a skirt steak. I marinated it with my vacuum sealer all day and the flavors really penetrated and were perfect.

White Fiber Mini Shells with Cherry Tomatoes, Basil and Parmigiano-Reggiano Cheese

Easy, quick and very good. I added some Garlic and Red pepper flakes. Great as a meal or a side dish. I served it hot last night and I will have it cold for lunch today. Yum! Love the Pasta!

Whole Grain Spaghetti with Cherry Tomatoes, Marinated Chicken Breast and Pesto

This was very good with a few modifications. I made my own Pesto and I added some Tropical Sazon and some red pepper flakes to the marinade for the Chicken. I will be making this again as it was easy and very flavorful. I liked the whole grain pasta, too.

Johnsonville® Italian Sausage Lasagna

Big hit in my house. I used Johnsonville Italian sausage and it was delicious. I liked the fresh spinach in it and will add this again. I did add a bit of red pepper flakes to the marinara sauce. I also seasoned my ricotta cheese with fresh basil and parsley. We loved it.

Praline-Pumpkin Mousse Cornucopias

Great Idea! These were amazing. We loved them. My daughter has requested them for her birthday which is on Thanksgiving this year. Next time I will make a double batch to make sure everyone has some. They disappear fast.

The Best Seafood Stuffed Mushrooms

This turned out great. I had to cook it a bit longer as the mushrooms were not cooked enough for us. I also added parmasean cheese to the bread crumbs and brushed it with butter. YUMMY.

Pork Carnitas

This was very good though I did cut back on the salt. I also added a jalapeno and Cilantro since I had some growing in the garden. Once it was done and shredded it I skimmed some of the fat off the reserved liquid and put it in a fry pan and tossed the meat into it to get crispy. Oh my that was so good.

Rotini with Asparagus, Salmon and Cherry Tomatoes

Very good and tasty. I made it for dinner and had leftovers for lunch today, even better today. The tarragon works real well with the Salmon. I will make it again. I also like the Barilla Plus Rotini which helped to make this a bit healthier and tasted great. This is a keeper!
