JELL-O Patriotic Mini Fruit Tarts

Perfect summer dessert. I made this one night last week and my daughter loved it so much that she had me make them again for our 4th of July celebration. It was very easy and quick to prepare, plus it looked great! No left overs either. I made them as written the first time and the crust rose up on me a bit so the next time I made them I put some beans in the bottom of the crust to help keep the shape a bit better when I baked the crusts. Everyone at the party wanted the recipe.

BBQ Beer Can Chicken

It was amazing and tender. We put it in our smoker at about 275-300 degrees and cooked it for about 2 hours and it was falling a part tender. I added a bit of bbq rub to the chicken and the beer. Best chicken ever BBQ'd/smoked.

Slow Cooker White Chicken Chili

This chili was very flavorful. I had to add a jalapeno and a couple cloves of garlic and that really added that zip of heat that we like in our chili. Using PAM made clean up a breeze, too. Easy and a great recipe. I did drain the one can of chili beans and glad I did or it would have been too soupy. It made my whole house smell good. Plus it was even better for lunch the next day.

White Chip Orange Cookies

I followed the recipe and these cookies turned out amazing. My husband who doesn't like white chocolate that much devoured a handful as soon as he got home. they are buttery, sweet with a hint of citrus. Yum!

Make-Ahead Tomato Basil Tortellini Bake

This was easy and tasty. Plus you can add some mushrooms, chicken, sausage or little meatballs to make it even better. I like the fact you can make it ahead of time and heat it up when you want it.

Salmon and Shrimp Cakes

Very good. The flavor was so much better than canned salmon. I did add a bit of green onion to it because I had it on hand. I served it with a Dill Hollandaise sauce. I will be making this one again.
