Amazing Muffin Cups

Reviewed: Mar. 18, 2013
I followed the recipe exact. I made these for brunch and they were egg-cellent! (Sorry had to!) We loved them. Very handy for breakfast on the go, a brunch or even a snack, too. Be sure to grease the muffin pans good or it will stick. I did have to cook the hash browns a bit longer than stated in the recipe to get a nice crisp to them. I will definitely keep this one handy. Possibilities are endless for mix -ins.

Make-Ahead Tomato Basil Tortellini Bake

Reviewed: Feb. 14, 2013
This was easy and tasty. Plus you can add some mushrooms, chicken, sausage or little meatballs to make it even better. I like the fact you can make it ahead of time and heat it up when you want it.

Rice Mix Meatballs

Reviewed: Nov. 5, 2008
I have been making this for years but I add some diced onion and garlic to the meat and rice mixture then I brown the meatballs. I remove the meatballs then sautee some green peppers, mushrooms, onions and garlic. Then I add the meatballs back into the pan and add the seasoning packet with the water. Sometimes I like to add a teaspoon or two of Tomato paste to the broth. These additions help make this recipe a 5 star rating. I use rice-a-roni Beef flavored rice. I even add some sour cream to the gravy sometimes.

Scott Ure's Clams And Garlic

Reviewed: Aug. 14, 2012
I love this recipe. I just made this the other day it's a great base I like to saute some shallots, a pinch of red pepper flakes and garlic together then add the wine and a bit of fresh lemon juice. Once reduced I add the clams and 1/2 herbs. Fresh Parsley, basil and oregeno. Cover and steam. Once clams are done I add the butter and the rest of the fresh herbs. Serve with crusty bread over pasta. Yum!

al fresco Roasted Pepper and Asiago Chicken Sausage Frittata

Reviewed: Sep. 30, 2012
We love Frittatas and this one was good. Though I made so many changes to appeal to my husband that it might be a new recipe. I nicknamed it Kicked up al fresco Roasted Pepper and Asiago Chicken Sausage Frittata. I also needed to use up some fresh veggies and potatoes. So I made some hashbrowns, then I roasted a few fresh hatch chili's and a jalapeno and I sauteed theses with some mushrooms and a bit of onion and garlic. I used the hashbrowns as a crust then layered sausage, mushrooms, chili's, peppers and onions, then I poured egg mixture over the layers. I put shredded gouda and parmesan chees on top. Once bottom was set on the stove. I put it under the broiler and set the top and browned the cheese a bit. This was excellent! Will make this again. I am posting my kicked up version. Check it out.

Thanks for sharing this recipe. We loved this recipe and I will make this again! Though I have to admit I only used about 4 of the peppers in the can and 1/2 of the adobo sauce. I did add some bell peppers and a jalapeno since I had them. My husband Loved it!

Classic Beef Stuffed Peppers

Reviewed: Mar. 26, 2013
I substituted Johnsonville hot Italian Sausage and it added a lot of flavor and gave it a bit of a kick. I also added mozzerella cheese in place of the cheddar. Delicous! Flavors blended well. We loved it and will try this again.

Italian Chicken Sausage Stuffed Portabellas

Reviewed: Sep. 30, 2012
My Hubby couldn't stop eating these during the football game. I did add a bit of red pepper flakes to the sausage when I browned it. Yum! I really liked it but thought it could use a bit of panko or bread crumbs mixed in and with the parmesan cheese on top. We like a little bit of crunch and a little touch of spice. Super easy too. A keeper.

Wow! These were good! I made them for an appetizer for my son's 28th Birthday party and they were a big hit. I put the bacon and smokies in a bag to marinate overnight. I assembled them and then baked them till done. Delicious! Try Them for your next party, you won't be disappointed.

Chimichurri Sauce for Steaks

Reviewed: Aug. 30, 2013
This was amazing. I used it on a nice Flank Steak. I made extra sauce and added it to my marinade to kick up the steak a bit and add tenderness. This sauce was just like at an Argentinean restaurant we like to go to.
