Apple, Pecan, Cranberry, and Avocado Spinach Salad with Balsamic Dressing

Very good. I toasted the pecans and I used a mix of dried fruit and it turned out great. we will have this again.

The Best Seafood Stuffed Mushrooms

This turned out great. I had to cook it a bit longer as the mushrooms were not cooked enough for us. I also added parmasean cheese to the bread crumbs and brushed it with butter. YUMMY.

Rice Mix Meatballs

I have been making this for years but I add some diced onion and garlic to the meat and rice mixture then I brown the meatballs. I remove the meatballs then sautee some green peppers, mushrooms, onions and garlic. Then I add the meatballs back into the pan and add the seasoning packet with the water. Sometimes I like to add a teaspoon or two of Tomato paste to the broth. These additions help make this recipe a 5 star rating. I use rice-a-roni Beef flavored rice. I even add some sour cream to the gravy sometimes.

Fish Tacos

I make this recipe a couple times a month. Family loves it. I like to season my flour with a bit of mexican seasoning. The sauce is excellent. I make the sauce ahead of time so the flavors meld together. When making the sauce I like to add extra Cilantro to the sauce. I made this again last night using fresh mangrove snapper... it is hubby's favorite. Mine too!

The Best Chicken Soup Ever

This was a good base. I ended up adding a few things to the soup ... Plus I used a whole chicken and adding fresh herbs, garlic, onion and mushrooms making a stock out of the liquid. I used a rotini pasta as I had it in my pantry. Turned out great.

Scott Ure's Clams And Garlic

I love this recipe. I just made this the other day it's a great base I like to saute some shallots, a pinch of red pepper flakes and garlic together then add the wine and a bit of fresh lemon juice. Once reduced I add the clams and 1/2 herbs. Fresh Parsley, basil and oregeno. Cover and steam. Once clams are done I add the butter and the rest of the fresh herbs. Serve with crusty bread over pasta. Yum!

Brown Sugar Smokies

Wow! These were good! I made them for an appetizer for my son's 28th Birthday party and they were a big hit. I put the bacon and smokies in a bag to marinate overnight. I assembled them and then baked them till done. Delicious! Try Them for your next party, you won't be disappointed.

Chili Relleno Casserole

I used roasted fresh hatch or pasilla chilis and it was amazing. I also like to use what ever cheese I have on hand. Last time I made these I used a mexican blend. sometimes I add grilled chicken, too. Love this recipes.

I used some left over Rosted chicken. I tasted it before I baked it and I had to add some thing to add to the flavor or my husband wouldn't eat it. I added some Garlic, diced red peppers, salt /pepper and some more mushrooms. After the additions it was really good.

Grilled Sweet Italian Chicken Sausage with Tomato Cream Sauce Over Linguine

We really enjoyed the grilled flavor of the sausage, which I kept whole per hubs request. I did add a bit more garlic and I used fresh Oregeno, basil and tomatoes. I used the red wine but I let it reduce down a bit. It tasted great. We will eat this again using the fresh ingredients.

Italian Chicken Sausage Stuffed Portabellas

My Hubby couldn't stop eating these during the football game. I did add a bit of red pepper flakes to the sausage when I browned it. Yum! I really liked it but thought it could use a bit of panko or bread crumbs mixed in and with the parmesan cheese on top. We like a little bit of crunch and a little touch of spice. Super easy too. A keeper.

al fresco Roasted Pepper and Asiago Chicken Sausage Frittata

We love Frittatas and this one was good. Though I made so many changes to appeal to my husband that it might be a new recipe. I nicknamed it Kicked up al fresco Roasted Pepper and Asiago Chicken Sausage Frittata. I also needed to use up some fresh veggies and potatoes. So I made some hashbrowns, then I roasted a few fresh hatch chili's and a jalapeno and I sauteed theses with some mushrooms and a bit of onion and garlic. I used the hashbrowns as a crust then layered sausage, mushrooms, chili's, peppers and onions, then I poured egg mixture over the layers. I put shredded gouda and parmesan chees on top. Once bottom was set on the stove. I put it under the broiler and set the top and browned the cheese a bit. This was excellent! Will make this again. I am posting my kicked up version. Check it out.

Apple Pie by Grandma Ople

My husband said this was the best Apple Pie I have made yet. I thought it was good too. It made a nice carmel crust on top. I did add Cinnamon to the sauce and instead of 3 tablespoons flour I used 2 plus 1 tablespoon Corn Starch. Then I took half of the sauce and mixed it with the apples then put the crust on and poured the remainder of the sauce on top of the lattice crust. YUM!

Creepy Mini Pizzas

The crust was easy to make. I made this for a halloween party so I set out all different toppings and let everyone make their own pizzas. Fun! I made a garlic pizza sauce and set out the toppings... Mozzerella cheese, Parmesan cheese, Pineapple and canadian bacon, italian sausage, mushrooms, Red peppers, Pepperoni and my favorite Pesto and shrimp. You can put any topping on you like.
