Strawberry Spinach Salad II

Mezzi Rigatoni with Chicken Thighs, Rosemary, Lemon Zest and Roasted Garlic Sauce

I made this today for my neighbor who cut my lawn for me. I usually make my own sauce but this is good to keep on hand. The flavor was good. I did add 2 Tablespoons of tomato paste to the sauce. Easy and good. Next time I will add some onion, mushrooms and some red pepper strips. All 3 grocery stores in my town didn't the Mezzi Rigatoni so I had to use Barilla Mostaccioli.

Thin Spaghetti with Garlic, Red Pepper and Olive Oil

Garlicky and delicious. I added a bit more red pepper flakes as I like it a bit spicy. I made this for lunch and served it with a green salad and it was perfect.

Rotini with Asparagus, Salmon and Cherry Tomatoes

Very good and tasty. I made it for dinner and had leftovers for lunch today, even better today. The tarragon works real well with the Salmon. I will make it again. I also like the Barilla Plus Rotini which helped to make this a bit healthier and tasted great. This is a keeper!

I made these with Johnsonville Hot Italian Sausages and the Knishes turned out amazing! Very Good! I had a hard time getting pictures as they disappeared in minutes.

Pork Carnitas with Cilantro Tomatillo Sauce

I made changes and loved it. I added minced garlic, jalapeno and I added a few quartered Tomatillos to the meat as it was cooking in the sauce. Excellent.

Sweet and Spicy Salmon with Grapefruit Salsa

We loved this. I made the grapefruit salsa and I used the Ruby Red Grapefruit. I added a dash of salt and 1/2 teaspoon of sugar as my grapefruit were very tart for Ruby Reds. I put the rub and oil on the Salmon and let it sit on the salmon for about a hour or two. Then I grilled it. Wow that was good.

Thanksgiving Leftovers Casserole

Super easy to make and will feed a family. We liked this though I think it was a bit bland and could of used some Turkey gravy mixed in with the meat. It was good and it makes good use of some leftovers.

Johnsonville® Italian Sausage Lasagna

Big hit in my house. I used Johnsonville Italian sausage and it was delicious. I liked the fresh spinach in it and will add this again. I did add a bit of red pepper flakes to the marinara sauce. I also seasoned my ricotta cheese with fresh basil and parsley. We loved it.

Grilled Turkey Cuban Sandwiches

This was Delicious! I put the boneless breast in my infrared Turkey fryer and it turned out moist and crispy. The sandwich had lots of flavor. I will be making this again. Yum!

Bison Tenderloin with Cherry-Onion Chutney

This was really good but I did alter the recipe as the cooking times seem wrong. I also added a touch of Chili powder and cumin to the rub. Then I preheated my grill, leaving an area for indirect heat. I seared the loin on all sides and then moved it to indirect heat (300 degrees) for about an hour with an internal temperature of 135. The Chutney was really good and the perfect compliment. Though it doesn't say in the recipe when to add the onions back into the cherry mixture, no big deal I just added them back in a little bit before I put the pears in and it turned out great. I will definitely do this again for company or a special occasion.

Chimichurri Sauce for Steaks

This was amazing. I used it on a nice Flank Steak. I made extra sauce and added it to my marinade to kick up the steak a bit and add tenderness. This sauce was just like at an Argentinean restaurant we like to go to.

I added some Greek Seasoning and used fresh minced garlic and parley and baked in oven as written. I also used the Tzatziki sauce on this website. My husband loved them and has already requested them again.

Tropical Chicken Skewers

Made these last night and we loved them. The flavors were amazing. I used red peppers and red onions because I hade them on hand. I also added some red pepper flakes and fresh minced garlic to the marinade. This is a keeper and easy too. My husband wants me to try it with shrimp next time.
