Nanaimo Bars III

Reviewed: Dec. 14, 2009
Excellent I'm an Island girl and these are perfect. I reduce the sugar from 2cups to 11/2 cups for the middle layer, just so they are not too sweet. Thanks

Simple Scones

Reviewed: Nov. 7, 2009
I love these! I didn't ever believe I could do better than the store bought stuff but defiantly worth making at home. I make them with the lemon zest and frozen blueberries they taste great I have made with frozen butter grated and just cold butter no difference in end product to me. Just use whichever I have at the time.

Exquisite Pizza Sauce

YUM! So good. I put it on the dough while I let it rise 20min in the oven. I didn't use anchovy paste and went light on the heat but will definitely make again

Pesto Sauce

Reviewed: Nov. 7, 2009
Excellent! It was wonderful as a spread on veggies or crackers. I halved the oil and replaced other half with chicken broth. I also followed another review and baked skinless boneless chicken breasts coated in this pesto sauce with grated mozarella cheese on top. Yum! A New family favorite. I served with bow-tie pasta and fresh local tomatoes. Thanks

Simply Sensational Truffles

Reviewed: Dec. 5, 2009
They taste wonderful I added 2 tsp of mint extract and coated them in white chocolate with peppermint sprinkles (festive colors) I have never made truffles and have NO idea how to coat them and make them look pretty! I skewered them on kabob sticks and coated them then spinning/dripping off the excess chocolate but getting them off I always left a mark in the chocolate and had to do touch ups. Any suggestions?

Pumpkin Apple Streusel Muffins

Reviewed: Nov. 9, 2011
Pumpkin spice as suggesteed by others, will substitute whole wheat and applesauce for oil next time. Sprinkled with pumpkin seeds instead of streusel for a healthier breakfast option.

Gourmet Caramel Apples

Reviewed: Nov. 3, 2010
Loved these. Try cutting in pieces to serve. YUM turtles chocolate meets sour apple. The CARAMEL SOLUTION!! Took wax off the apples rolling them through a quick boiling water bath. I did the caramel in the double boiler (just until smooth but not too runny) dipped apples & wiped excess off bottoms and dipped quickly in COLD water (not above the "caramel line") then smoothed caramel with wet hands patted dry on tea towel then put in fridge for 20min I had no problems with caramel coming off the apples. While I did the chocolate in the double boiler I made caramel strings just rolling/pulling excess caramel from pot. dipped cooled apples in dark chocolate rolled in chopped pecans placed caramel strings on apples and then drizzled with melted chocolate from a baggie with tip cut.
