Real Hummus

Made as per recipie decreased liquid, also tried with black beans instead of chickpeas - no liquid and more garlic - wished I had cumin to add flavour.

Pumpkin Apple Streusel Muffins

Pumpkin spice as suggesteed by others, will substitute whole wheat and applesauce for oil next time. Sprinkled with pumpkin seeds instead of streusel for a healthier breakfast option.

Pad Thai

So many changes required but excellent finnished product 5 star, easy to make. Sub out butter for olive oil*, cook chicken with 1tsp minced garlic* and put aside Double Sauce and subs* equals: 2Tbsp Rice vinegar*, 4Tbsp Fish Sauce 3Tbsp White Sugar 3/4 Tbsp. Crushed red pepper 2Tbsp. Chili & Garlic Sauce 2 Tbsp Peanut Butter 1 Tbsp Satay spice (Victorian epicure)* sub soya sauce? 1 tsp Cayene 1Tbsp Lime juice 1/2Cup Chicken broth or coconut milk for creamier sauce May add 1/2Tbsp Cornstarch to thicken sauce* Add to fry pan: Sesame Oil Rice stick Noodles cooked and cooled as per package directions (in bowl soak in boiling water 5-8 min drain, rinse cool) 1 Lg. carrot thinly sliced/grated 1/2 cup diced red pepper 1/2C. crushed peanuts 1 1/2 C bean sprouts Cooked chicken and shrimp Garnish: Lime wedges Cilantro 1/2 C. Bean sprouts 1/2 C. crushed peanuts extra cilantro to garnish

Classic Gingerbread Cutouts

Didn't worry about all the spices... kids probably won't eat them made it 1/2 with white and 1/2 brown flour as I ran out of white. Used the bosch and switched to dough hook after adding first portion of flour. Doubled recipie but it was too much. REcipie as is makes a 6" by 4" houses

Gourmet Caramel Apples

Loved these. Try cutting in pieces to serve. YUM turtles chocolate meets sour apple. The CARAMEL SOLUTION!! Took wax off the apples rolling them through a quick boiling water bath. I did the caramel in the double boiler (just until smooth but not too runny) dipped apples & wiped excess off bottoms and dipped quickly in COLD water (not above the "caramel line") then smoothed caramel with wet hands patted dry on tea towel then put in fridge for 20min I had no problems with caramel coming off the apples. While I did the chocolate in the double boiler I made caramel strings just rolling/pulling excess caramel from pot. dipped cooled apples in dark chocolate rolled in chopped pecans placed caramel strings on apples and then drizzled with melted chocolate from a baggie with tip cut.

Extreme Chocolate Cake

I halved the recipe made a half circle stacked cake. It was very rich and delicious. It is missing something I'm not sure what yet. It was good though. I will make again maybe with whip cream and strawberries

Blueberry Sauce

I made it with frozen blueberries, peach syrup I had leftover from a can of peaches in place of the orange juice and I also added 1 Tbsp Lemon Juice. Not the same as the recipe but in a pinch it worked!

Two Step Creamy Cheesecake

It was light and creamy, I still can't get over using the whipped topping but my family loved it. I used 1/2 the frozen topping as called for. I made a wild blueberry sauce and served it warm on top of the cake.

Easy Seafood Alfredo

One of the BEST pastas my husband has EVER had! and he loves the culinary world. Additions and changes: 4 tbsp Cream cheese 4 slices of (big stick cheddar) chopped small instead of American cheese 1 Cup Whip cream in place of Half and half Fresh Basil 1-2Tbsp loose after chopped Fresh Parsley 1-2Tbsp loose - after chopped (4 sprigs) Salt to taste 20-30 Frozen cooked Prawns defrosted under running cold tap water, Shells removed and shrimp chopped into chunks in place of crab meat I used Sundried tomato & Basil Spaghettini for pasta - great combo!
