Cottage Pie

This is a simple and delicious one-dish meal. It is a great way to get young children to eat their veggies. I substituted ground turkey and added a splash of Worcestershire for extra flavor. For the peas, I used a bag of seasoned frozen peas with mushrooms, which also added a lot of flavor. Added in some carrots for extra vitamins and all set.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

I will confess to being something of a cake snob. I never use cake mixes, but today I really wanted to try these cupcakes out and I needed a quick Halloween goodie for a party. I used a chocolate cake mix and refrigerated cookie dough, which happened to be chocolate chunk with peanut butter cups. Delicious! Only froze the dough about 30 mins. It didn't sink to the bottom like in many of the photos, but it also did not melt into the cake so it worked fine. Topped them with vanilla buttercream, and was genuinely surprised at the awesome results! Seriously, people will think you are a genius. No issues with dryness. For the cookie dough, white chocolate & macadamia nut would be a nice combo as well. Very nice recipe, and I can't wait to try it with cake from scratch! :-) Thanks, LTH!

Shiitake Angel Hair Pasta

An excellent recipe. The mushrooms soak up all the yumminess from the chicken stock and white wine and go perfectly with the creaminess of the sauce. This is a nice side dish for a change from the usual potatoes or rice. It is also a nice meatless main dish and is even good with plain white mushrooms if that is what's in the fridge.

Chicken Scarpariello

This chicken was very simple and delicious. The only change I made to the recipe was to use Italian seasoning instead of only rosemary. The simple ingredients yield a very flavorful result. In order to thicken the sauce, an extra teaspoon of flour was necessary. For a simple meal, one could easily double the sauce to toss with some angel hair. Serve chicken on top, perhaps with some capers tossed in. Definitely a meal that would be impressive served to company.

Pumpkin Cookies I

These cookies are very tasty! They turned out super moist, sweet, and pumpkiny, just like Mom used to make when I was young. My personal modifications were to use half white and half brown sugar, the entire can of pumpkin, a couple extra tablespoons of flour, and double the cinnamon with a sprinkle of nutmeg. I also used half butterscotch and half chocolate chips and they taste fabulous together with the pumpkin. The cookies did not spread but instead turned out to be perfect little mounds of cakey goodness!

Grilled Hawaiian Chicken and Pineapple Sandwiches

This sandwich was very tasty. A solid four in my opinion, but my husband's praise bumped it up to five! The thousand island dressing nicely complements the sweet chicken and pineapple.

Haitian French Toast

Absolutely delicious. I found the orange flavor to be very distinct. This is a sweet bread that is chewy around the edges and soft in the middle. Really simple and guaranteed to impress for company or any holiday breakfast.

Sour Cream Cut-Outs

This is the ideal cut-out cookie recipe if you plan to frost your cookies. The dough is easy to work with, and the result will be a fat,soft cookie & the perfect base for decorating. Use super sweet frosting and your cookies will taste exactly like those big, soft frosted cookies you can buy from your grocery store. Definitely bakery quality!

Fresh Broccoli Salad

The ingredients in this version of broccoli salad are spot on, except for the dressing. As written, it is a little too sweet. Once I added more vinegar, it worked. No leftovers at the party, so clearly a winner!

Rosemary Ranch Chicken Kabobs

This recipe has become a favorite in our house. It always turns out tender and tasty, and is so easy to make with basic ingredients. I typically decrease the salt and sugar by half due to personal preference. Leftovers make a delicious chicken salad.

Chilled Marinated Asparagus

This recipe is five star all around - easy, delicious,and made ahead of time. All of my guests loved it. The asparagus looked beautiful on the platter, and would also be picnic friendly. The only change I made was to reduce the oil to 1/3 cup, although 1/4 cup would have been enough.

Spicy Oatmeal Cookies

This cookie has a nice flavor combination. It is not overly sweet, although my usual addition of chocolate chips made it perfect. The chips aren't necessary, though, for a yummy result. Could use a little more cinnamon.
