A Little Different Baked Mac and Cheese

My kids loved this. I used shells instead of elbow mac, and leftover ham instead of the tomatoes. Also used ritz crackers and that did give it a nice sweet taste. I think it could have used more milk to make it a bit creamier as ours was pretty dry. But still good!

Mom's Easy Chicken Divan

The flavor of this is just outstanding! I halved the recipe, but still used 2 cups of rice. Also didn't have curry powder so I subbed garlic powder. Next time I may thaw the broccoli a little beforehand as it was a little crunchy. My picky 6 year old loved it and even asked for seconds :) I will be adding to my rotation, thanks!

Kielbasa with Pasta

This is so easy & versatile, we love it! Great for a nice, light lunch or dinner. We have used 2 fresh tomatoes, chopped instead of the stewed, and it's just as good. Also, I butter the noodles but set the parmesan on the table for everyone to add to taste. Thanks for a keeper!

Mahogany Pork Chops

My husband said these were the best pork chops I've ever made! I marinated for 4 hours and cooked on a grill pan, 10 mins per side was perfect. Thanks for a keeper!

Chicken Fiesta Salad

So simple yet so good! perfect for a summer meal. Added sliced avocado and a dollop of sour cream and the whole family loved it. Definitely a keeper!

Best Spanish Rice

This rice is so simple but so good! I add an extra 1/2 cup of broth as some other suggest, and cook it about 5 minutes longer too. No need to buy the boxed stuff when you've got a recipe this easy!

Slow Cooker Pot Roast

Best pot roast I have ever made! The flavor is outstanding. I did add an extra 1/2 cup of water as some suggested there was not enough gravy, but I ended up having to thicken up the juice with cornstarch and it made a TON of gravy, so next time I will only use the 1/2 cup. This one is definitely going in the recipe box!

Mexican Style Shredded Pork

I added cumin as other suggested, and also extra chipotle sauce because it was lacking flavor. The meat just fell apart when I took it out to shred it. Did not make the rice but stuffed enchiladas with the meat, it was delicious!

BBQ Pork Pizza

Easy Lasagna II

Best lasagna I've ever made! And easy, can't beat that. Even my food critic husband had nothing but good things to say! I added garlic powder to the meat, used less cottage cheese (3 cups instead of 4) and used two 24 oz jars of sauce. Also ended up with extra mix so I added one more layer. This one's a keeper for sure!

Mint Chocolate Chip Pie

This was so simple, but so good! I followed some other reviews, using an oreo crust, frosting with a layer of cool whip (after ice cream had set up for a couple hours), and adding crushed andes mints on top. It was a huge hit at our Christmas party and I will definitely be making it again!
