Tangy Slow Cooker Pork Roast

This was very tender, tasty and SO fragrant. I will make this again soon, but add 1 or 2 more onions because they were so yummy too!

Chicken Jalfrezi

I loved this! I make a lot of Indian dishes that take quite awhile to prepare, but this was super easy to make in just a few minutes after work. I will definitely make this frequently and it is a great recipe to add veggies or easily make vegetarian with tofu, paneer, or chickpeas. Yummy!

Indian Chicken Curry II

This was very easy and really tasty! I doubled everything and used a cinnamon stick rather than ground. I also added all the spices after the onions cooked down and let them cook for several minutes to bring out the flavors before adding the other ingredients. YUMMY!!

Chole Saag

I at least doubled this recipe a month or so ago and froze some of it. The night I made this, I didn't really like it. HOWEVER, the leftovers were out of this world! The only thing I did differently is I added a little lemon at the end, and toasted my spices. It smells phenomenal and I will be making this again tomorrow! Thanks for a great recipe.

Rich Spinach Casserole

Wow! I thought this was fantastic. I eat spinach daily and this is certainly a keeper. I didn't have Velveeta, so I used cheddar -oh and fresh spinach rather than frozen (only because I needed to use it up). It sat on low in my crockpot for 5 hours and was just great. My family liked this, too.

BAKER'S Peanut Butter Oatmeal Chocolate Chunk Cookies

I couldn't keep out of the cookie dough! The actual cookies turned out great too-the peanut butter made the difference. I did use chocolate chips, but everything else was exactly as the recipe states. Only flattened a little.

Big Soft Ginger Cookies

Wow! These were fantastic. I didn't change a thing and they turned out perfect. The first batch in the oven I flattened too much and made them too big. They spread some. I did add a little extra sugar on top after I flattened.

Spinach Casserole

I love spinach, and this was great. I did use 3 times the amount of spinach called for (and a combo of fresh and frozen that I didn't squeeze dry), and it was still very creamy. Any excess moisture cooked off and it had a great texture.

Cream of Spinach Soup

This was ridiculously good!!!! Made it for lunch and my 2 year old had 3 servings. Very easy. I did put the spinach mixture in the blender for just a second (which made the soup a darker green) and added a little garlic powder and chicken broth. Very forgiving recipe, as I didn't measure a thing. Thanks! It's a keeper!

Holiday Peppermint Bark

I've been making this for years now, and it HAS to be he easiest thing I make at Christmas. My husbands demands it now ;) Sometimes I'll melt milk chocolate chips first and let them set up and then the white chocolate over that.

Peanut Butter Bars I

Excellent and easy recipe. I used organic PB (and about 1/2 cup more than called for and added it to the butter to melt-really helped), and only 1 1/2 sticks of butter (didn't miss it). I thought when mixing the crust I should have gone with the full amount of butter, but it came together and held up very nicely. Great recipe-my hips thank you!

Thunderbird Stew

It doesn't get any easier than this! I used stew meat and added carrots, potatoes and celery. I wanted a stew with a lot of gravy so I doubled everything except the meat. My family loved this and I loved that it only took a few minutes to get it together. Thanks!!

Lots o' Cookies

This is a great recipe. I made it as written but made big balls which took about 14 minutes (in my oven) to cook. By making them big they stayed very moist inside and crispy outside and didn't spread much. Next time I make them I'll add flax seed and craisins-super easy to change up the additions. thanks!

Warm Blue Cheese Dip with Garlic and Bacon

This was a hit at wine club! I used turkey bacon and doubled the garlic and served with a baguette and pears. It was the perfect size for the mini crock I've never used.

Wicked Good Veggie Chili

This was excellent. For some reason I had no chili powder so I used a couple tablespoons of chili seasoning and a little extra cumin (and omitted the salt, pepper, and cayenne because the chili seasoning contains them). I cooked it on low for a couple of hours to cook down some. Fantastic! My husband really liked it as well and he was amazed the TVC wasn't ground beef. I'll make a double batch tomorrow for my veggie friends. Thanks for a keeper Paulina!

Banana Cake II

My 4 year old asked for banana cake for his birthday and I wanted a recipe that didn't taste like banana bread. This was great the day I made it, but I must say it tasted superb the next day when it had been in the fridge! I put a cream cheese frosting on it, but I would have preferred it with nothing at all. I followed the recipe exactly, except I added some finely chopped walnuts. My husband took 1 bite and said it was the best banana cake he ever had. EXCELLENT RECIPE! And it was really quick to make. I had to bake it for about 50 minutes in a heart shaped springform insert (would have been equiv of 2-9" rounds).

Breakfast Pies

I had extra's so I froze them, then reheated and they were better the second time around. They are pretty "biscuitty" on the bottom so next time I will use 1/2 biscuit in each (personal taste). Very easy and I love that I can have them on hand. Good recipe to use up ingredients you have on hand.

Pickled Hot Peppers

I decided to make these before I went to work this morning and it really only took about 10 minutes. I scaled it down to 10 servings and it nearly filled a 3 cup jar. I didn't do a water bath because I put them in the fridge. I used what I had picked-banana peppers, 2 jalapenos, and I decided to throw in a green tomato. YUMMY! I set it on my counter at 7:30 and ate some at 1:00 and they were fantastic. I will certainly make this again with whatever I have on hand, but the jalapeno is the important part for the spiciness. Super Easy and tasty. Thanks for the recipe! Oh-I did not boil the veggies w/ the brine, but just added them (minus the tomato) for the last minute of simmer then put them in the jar on top of the tomato.

Easy Hummus

This truly was the easiest hummus I've ever made and it tastes great. I used dehydrated garbanzo beans so I had a lot of cooking liquid to use. I kept adding it until I had a creamy consistency(probably close to 3/4 cup), and I also added some olive oil for a little more flavor. I found it also needed salt. Excellent. This is my new go to hummus.
