I'm giving this five stars because I'm sure it's delicious as stated, but I did make some changes to make it a bit healthier, and it was soooo good! First, I used egg whites instead of whole eggs. Next, I used a plain bread crumb and oatmeal mixture seasoned with dried Italian herbs (only about 2 cups). I omitted the Parmesan cheese and just used 1 package low-fat mozzarella. I also layered fresh, raw broccoli florets during the baking stage, which added a very nice veg. I'll try using homemade, low-sodium tomato sauce next time. Served it over whole-wheat pasta. DELICIOUS!! I can't wait to eat the leftovers tomorrow!!
