Fluffy Pancakes

OMG! Why buy pre-packaged pancake mix when this is sooo easy and soooo delish!!? I followed the recipe exactly, adding about 2 tbl of water because the mix seemed thick and I like my pancakes a bit on the thinner side (just personal preference). The homemade mix seemed to cook a bit more quickly than store-bought (about 2-3 mins), so be sure to check so it doesn't burn. Now if only I had a maple tree in my backyard...

Jeanie's Falafel

I made these exactly as directed, with one crucial tip between steps 1 and 2: Freeze the falafel balls before frying. Just a couple hours in the freezer, then just throw them in the oil, no defrosting necessary. This helps the balls to keep shape without disintegrating in the oil (I do the same with Chinese fried spring rolls!). I kept them in the oil, flipping once until just brown on the outside (about 2 minutes), then stuck in the oven at 150C for 15-20 minutes to heat them through. Nice and crunchy on the outside, soft and flavourful on the inside!! Delicious!!!

Cambodian Chicken Soup

Excellent recipe! I made the soup exactly as directed, except I left the rice in a separate dish and spooned the soup over it when served. I also added carrots and sweet potato that I boiled in chicken broth beforehand. I'm sure it would be even better with shrimp!

Eggplant Parmesan II

I'm giving this five stars because I'm sure it's delicious as stated, but I did make some changes to make it a bit healthier, and it was soooo good! First, I used egg whites instead of whole eggs. Next, I used a plain bread crumb and oatmeal mixture seasoned with dried Italian herbs (only about 2 cups). I omitted the Parmesan cheese and just used 1 package low-fat mozzarella. I also layered fresh, raw broccoli florets during the baking stage, which added a very nice veg. I'll try using homemade, low-sodium tomato sauce next time. Served it over whole-wheat pasta. DELICIOUS!! I can't wait to eat the leftovers tomorrow!!

Skillet Ham, Cabbage and Potatoes

This made my Irish blood smile :) I cooked the onions and the ham together first as suggested by other reviewers, and boiled the fresh, thickly sliced potatoes in a separate pot while the cabbage simmered. I used 1/2 a can of chicken broth when simmering the cabbage, and the other 1/2 when I added the potatoes. Skipped adding more sodium, added an extra dash of paprika. DELISH!

Microwave Apple Crisp

Ovens are a rare commodity in China (where I'm currently living) so I was so excited to come across this recipe. I made it yesterday and it was so delicious! It's even great the next day, cold (eating right now!). Instead of allspice, I added a pinch of clove, and I added a drop of vanilla into the butter before mixing it. I also topped it after cooking with some granola to get that oven crunch. Worked out pretty well. And it was so quick and easy! Thanks!!

Old-Fashioned Italian Zucchini Fritters

I made these last night for friends, and they were delicious! To get rid of some of the water, I put the shredded zucchini on some paper towels before adding them to the egg mixture. They were still a bit soggy, especially after sitting out for awhile. Popping them in the oven and baking them for a few minutes might give them a nice crunch. I might add some shredded carrots to the batter next time to give them some more color too.
