Citrus Turkey Roast

Cranberry Pistachio Biscotti

THANK YOU! These were excellent, and I can't wait to make again with various add-ins. I was nervous because the batter looked sticky at first, almost like a super-thick brownie batter, and I didn't know how the loaves would keep their shapes on an open pan, but they held together well through baking, slicing and rebaking. Yum!!

Gyros Burgers

Delicious! I added 1/2 a teaspoon of crushed red chili flakes because my husband likes things spicy. Instead of making burger-sized patties, I made small flattened meatballs and browned them in a large non-stick skillet. I served these with hummus, lettuce and tomatoes in warm whole-wheat pitas. I will definitely make these again!

Barbecued Beef

I let this cook for 17 hours on low, and it came out great! Came apart with a fork, not too strong a ketchup-y flavor. I would go for more liquid smoke next time I make it! I didn't want to make any changes the first time I tried it, but my husband, seeing the liquid level drop and scared it would burn, threw in a 10oz can of beer when the beef still had 12 hours to go. The gravy, obviously, was thinner, and I don't know how much the flavor was changed.

Zucchini Brownies

WOW!! I made exactly as posted (except half the flour was whole wheat), and though the batter was dry, like some people had commented, the brownies came out moist and dense and chocolatey... unfortunately, my husband caught me pulling them out of the oven and saw the slightly fibrous texture and got weirded out. Once the brownies cooled down, the strands of zucchini (I shredded them on the very thinnest holes of my grater) dissolved into the brownies, and the texture was not stringy or strange at all! With frosting, my husband was willing to try and liked them very much. Will DEFINITELY make again!

Banana Oat Muffins

Very good muffins! I used 3/4 c. each of white and whole wheat flour, and they came out excellent! When I made them again, I was 1/3 c. short on mashed bananas and improvised with 1/3 c. of mashed strawberries. They came out delicious!
