Tomato Pie I

I submitted this recipe and would like to point out that measurement were posted wrong and lemon juice omitted. I use 1/2 to 3/4 cup of mayo or miracale whip with a squirt of lemon or lime juice. Also used fresh and dry basil. Could also use fresh garlic. This basic recipe is easy to change up with other veggies and herbs and chesses. Thank You

Mexican Style Cornbread

This is an awesome Jalapeno' cornbread recipe! I've been using the same one for years. I found my on the back of Tenda Bake self-rising cornmeal. You can always make it spicier by adding more peppers. I receive request all the time for this recipe at parties and family funcitons.

Eclair Cake

This recipe is an old favorite, so easy. The only thing I would suggust is to try dipping the graham crackers in amaretto liqueur. Helps soften crackers and cuts down on required waiting. Taste good too!

Spinach Basil Pasta Salad

Sorry, but we found this recipe very bland. I did end up adding redwine vingar and salad seasoning to try and spice it up a little. I think some onion and maybe feta cheese might help.

Lemon Butter Chicken

Thank you for posting this recipe! We really enjoyed it. It was so nice to have everything on hand in the pantry for a change. I used whole chicken breast, raised oven temp to 400 degree and roasted for 40 minute or less. I think this recipe would also work great for roasting chicken for chicken salads or casseroles.
