Red Lentil Curry

I have made this several times, and it always comes out wonderfully. I prefer more sauce and a little more substance, so I usually add a block of frozen chopped spinach to the sauce, then a can of tomato paste. The spinach thaws and adds water to the sauce as well. After that I add water if it needs to be thinned out. I usually add a bit more of each of the spices as well, to compensate for the increased amount of sauce and vegetables. I then serve it over Basmati or Jasmine rice. I have received many compliments and requests for this recipe!

Roasted Carrot and Cauliflower Curried Soup

I absolutely adore this soup! I added extra curry and lime because I don't like the taste of coconut very much. Tried it once without the lime because I didn't have any, and it wasn't nearly as good. Also, I have made it with both vegetable broth and chicken broth, and I think the chicken broth gives it a better flavor.

Too Much Chocolate Cake

Because I made a shaped cake with this (instead of bundt), it took much longer to bake than the recipe calls for. When I finally took it out, it was so moist that I was afraid it still wasn't completely done. It was VERY dense and moist, and I was afraid it would fall apart when I cut it, but it held its shape really well after it cooled. My son loved his birthday cake!

Udon Peanut Butter Noodles

I made this for a meatless meal, so I didn't include the chicken and added in a fresh vegetable mix that included snow peas and broccoli. Otherwise, I followed the recipe. My whole family loved it. I could eat the peanut sauce plain, it's so good!

Fragrant Chicken Curry

I made exactly as written, with one exception, and it was wonderful! I like a bit of sweetness with my curries, and had some apples available. I cut them up, but was resigned to having them brown because I didn't have a lemon. Then I realized I did have a lime, so I added the lime juice to the apple pieces and sprinkled them on with the cilantro. The apple gave a crisp texture to some of the bites, and lent a sweet/sour combination that added another level of flavor to the curry. Delicious!
