Cajun Boiled Peanuts

Florida is known for its boiled peanuts. Boiled Peanut carts are everywhere. When a dear friend came to Jacksonville who loves these peanuts, we tried this recipe. They were perfect. We had them in the crockpot for 36 hours.

Glazed Lemon Supreme Pound Cake

I needed an Orange Pound cake, so I substituted all the lemon ingretients with orange; orange cake mix, orange gelatin, orange extract and orange juice. It turned out perfect.

Fresh Cantaloupe Bread

Shrimp Lollipops with Pineapple Chili Dipping Sauce

Made these lollipops for a Mardi Gras party. They are very good and were gone in no time. The first batch I made I refrigerated overnight and they went on the skewers and baked up nicely. The next batch, I did refrigerate for the 30 minutes, and the batter was hard to manage to put on the skewers. I found that if I put the mixture into ovals and baked them before putting them on the skewers, they turned out great. The sauce is awesome, too.

Hawaiian Sweet Bread

Instead of 1 cup of water, I used 1 cup of pineapple juice. I baked it in a 10" round pan and it turned out perfect. I put spinach dip in the Hawaiian bread and everyone enjoyed it.

Strawberry-Mint Soda

Great tasting. I did use 1 lime and 1-1/2 tablespoons of lime juice; doubled the amount of strawberries. The drink had a great strawberry flavor with just a touch of enough lime. Will definitely make again for a hot summer night in Florida.

Almond Chocolate Coconut Cups

Used them for my son's catering business. Everyone really enjoyed them. I did as was suggested and added another egg to the cake batter and only used 2 tablespoons of milk in the frosting. Also after baking cups for 7 minutes, I thumbprinted the cups and baked another 2 minutes. They were perfect for the filling. I didn't spread the frosting all the way to the outside. They looked prettier.

Sugar Free Christmas Cutouts

This dough was easy to work with. I used it for my granddaughter's school class because the school prefer's goodies that are good for you. They ate them up. I did frost them and decorate them.

Perfect St. Patrick's Day Cake

Delicious! I did bake this in a 9"x13" baking pan and left it in the pan. Cooled it, then frosted and ganached it. Turned out perfect and went to my son's business for St. Patrick's Day. Everyone loved it and wanted the recipe.

Garlic and Herb Bread

McCormick® Gingerbread Men Cookies

Delicioous cookies. Just right softness. Do not refrigerate longer than an hour. The dough becomes too stiff to roll out if refrigerated any longer. Will make these again, for sure.
