Having had to re-think my eating habits, I was looking for a broccoli soup recipe that was low in calories. I was skeptical about how it would taste without all the cream and the cheese that's in my favorite recipe from here......but I have to say that this one is not missing on anything.........except the calories. I like my soups a bit chunkier so instead of using a hand blender, I used a pastry cutter to mash it up, and added a dash of worchestershire and a bit more garlic. This one is my favorite now, and I will be using the potatoe as a substitute for a thickener in many other soups from now on.

Best Ever Jalapeno Poppers

This recipe took me from "what the heck am I supposed to do with all these peppers??? " to " we need to plant more next year, many more!!! Time consuming but well worth it, may as well do a big batch because they really don't last long.

Rosemary Jelly

Loved this recipe but I too will increase the rosemary next time, It tastes great but people keep saying it's lime jello ( but I know it's not and will keep working on it )

Hot Pepper Jelly

I tried this recipe and many others for hot pepper jelly. I too have trouble getting it to set even when doubling the pectin, I think it's a chemical thing going on between the pectin and the amount of "HOT". doesn't matter though........it's a hit even when runny, will triple the pectin next time and see if that helps.

Firecracker Grilled Alaska Salmon

I had never been a real friend of salom, but I have one kid that loves fish, so every year for his birthday, I do a new fish recipe. I picked this one last year, followed it exactly, and I have been totally won over with salmon. I now have a freezer full of it. I have simplified the recipe down to a basic rub of dry ingredients with the same flavours that is on hand at all times ( and work well on pork ribs or roasts too ) done it on a cedar plank....which is amazing. Overall............it's a winner.

Freezer Cucumber Pickles

I too was very sceptical but figured I may as well try it. We absolutley loved it,it's even better after being frozen, if they get that far. And like everyone else I mucked with the recipe as well, but not with the flavour. I swithched it from slices to spears. I sliced the cucs into spears, beat them about in the bowl for awhile to get rid of the seeds,then rinsed and started the recipe.They are a great alternative to chips or pretzels. I also tried the same recipe with green cherry tomatoes and they worked out great although none of them have made it to the freezer so I don't know how that works out yet. You just can't use the ones that are really small and green, they are still too bitter for the sugar to win over. Anywhere close to full size is O.K.
