Roast Pork with Maple and Mustard Glaze

We love this recipe. I too ended up just placing it in the crock pot for about 5 hours on high. I did lift the lid maybe halfway through to turn the pork loin over so the wonderful "gravy" would seep in on both sides and basted it a bit. Wonderful flavors. Thanks for the recipe!

Shortbread Supreme

These were great! I was also a wee bit lazy and just firmly pressed these into a brownie pan and baked a bit longer and then cut into strips. WONDERFUL. One thing I did do was to lightly brush the top with milk and then sprinkled granulated sugar on top to give it a light sheen. Thank you for the recipe. This is a real treat!

Baked Spaghetti Squash Lasagna Style

This was GREAT! I'd never even had spaghetti squash before, so thought this would be a tasty one to try. NICE! Did one can of diced tomatoes and one can of tomato sauce, and browned 1lb of italian sausage to put in sauce. Had fresh basil and parsley on hand, so that's what I put in instead of dry. Omitted olives since not a fan. Thank you for the recipe - a hit with my family too!

Spiced Butternut Squash Muffins

Tasty! Great way to use butternut squash from CSA box. Ended up doing as loaf so it was a little scant in the standard loaf pan, but was fine - just not "tall" in the pan. Sprayed pan with PAM and baked about 50min instead. Not too sweet, but nice flavor. Will try with actual pumpkin pie spice next time... didn't have any so made my own mix. Thank you for sharing this recipe! Good stuff.

Black-Eyed Pea Gumbo

This is GREAT! Thank you for the recipe. Taking a cue from other reviewers, I added smoked sausage (browned that first, then removed and did the onion/celery/peppers in the same pot to flavor them - returned it when adding the stock and other ingredients). Used two cans of plain tomatoes (no salt added) then put in some hot peppers and some creole seasoning - about 3/4 t. Cheated and used Uncle Ben's Ready Rice (brown) in the pouch so just heated that and put it in the bowl before putting the gumbo on top of it. Also used Pearson's black eyed peas from produce section in lieu of canned - just boiled them 10min as per instructions on package. Served with cornbread and it was a wonderful New Year's lunch. Thank you for sharing this!!! Going to be a tradition now, but of course will want to do more than once a year...!

Autumn Squash Casserole

Had buttercup squash in my CSA box and since I'd been inundated with squash, I wanted to try something other than baking/roasting or making a quick bread. Took this to Thanksgiving dinner and boy, did it go fast! Everyone LOVED it. I ended up using buttercup and acorn squash in this and I diced the apples rather than sliced, but otherwise followed the recipe. So good! Passed the recipe on to everyone there! Thank you so much for sharing. This is a keeper!

Chewy Chocolate Chip Oatmeal Cookies

Soooooo good! Didn't modify much. Just did bag of chocolate chips and omitted nuts. When adding in dry ingredients stir in with spoon only until all JUST mixed in. Then same with the oats and chocolate chips. Don't over mix. My cookie sheets happened to be ice cold so perhaps that helped. Baked for 12 minutes at 335 and then watched for a couple of minutes longer. Let sit 5 minutes. I could eat an entire dozen right now! Thanks for a great recipe. Definitely my top choice for oatmeal!
