Quick and Easy Brownies

Yes!! This recipe was indeed quick and easy. It was good that the instructions were brief... I made this while friends were over, and it was simple enough to focus on them and not the recipe! I added two handfuls of chocolate chips too, just to make it extra awesome! =D Thanks C. Nelson!!

Catherine's Spicy Chicken Soup

Mmm this stuff is good! Definitely only needs 1 can of tomatoes, and I actually forgot the condensed tomato soup, so it's fine without that, too! I only used 3 chicken breasts and 1 quart of water, and this nearly filled my soup pot! Thanks, Catherine! I like that it's unique enough from the other soups I make to be added to my mix.

Butter Brickle Frozen Delight

This recipe was very good - and very rich! I caramelized a can of sweetened condensed milk because it's better for your body than caramel (just look at the back of a jar of caramel! Not good!) The substitution worked marvelously. I just kept this in the freezer and served a few slices when people came over and we got dessert for several night's company out of it!

Acorn Squash Wonder Tacos/Chalupas

Surprising use of acorn squash yielding a savory delight. This recipe is now our second favorite taco recipe (right below "Grilled Fish Tacos with Chipotle-Lime Dressing"). I'm so glad we tried this! I prepped the acorn squash for peeling by poking holes in it (as you would for a potato) and microwaving it for 3 minutes. Peeling took a while and grating took a while, so for us it was at least more like an hour start to finish. This is worth the effort though, we will definitely make this again.

I really liked this. It's so easy! I actually used half semi-sweet and half unsweetened (just what I had on hand) and coupled with my natural peanut butter and everything I figure this was probably a pretty healthy sweet!

Taco Bake

This is a very easy meal that ends up tasting good enough that you'll be happy to serve it to guests or just at home with your family! We topped it off with crumbled tortilla chips which gave it just the right cruchy/salty touch.

Baked Ziti Italian Style

Compared to World's Best Lasagna, this doesn't stack up, however, as a meal and a recipe in general, this is great. I liked that although this is very similar to lasagna, it DID have a different taste and is therefore worth keeping. ---- I used 1lb. ground turkey because it's healthy and I happened to have it on hand, couldn't find ziti pasta where I shopped but I recommend but I recommend that others DO (my dish was basically overflowing because penne is thicker I think), and I used dry instead of fresh basil because it was all I had, but it worked out well anyway! Use the directions and it will come out perfectly.

Firecracker Fried Chicken Drumsticks

Simple and great. I marinated mine for two nights so I rinsed the hot sauce off before coating and it was nicely spiced. The amount of cooking time was great. I halved the salt, and used only as much oil as I needed (maybe 1 cup by the end) - this recipe is a keeper!
