Green Curry Thai for Kings

This was good BEFORE I put the coconut milk in. Afterward it was very bland so I tried putting more and more seasoning to compensate, but it just didn't taste authentic. I'm going to either seriously adjust the coconut milk or scratch this recipe altogether.

Indian Chicken Curry II

This was very good. My only complaint here was that the coconut milk made it very bland, so then i had to go back and add moer than twice the amount of spices specified. GREAT recipe, I'm just going to try half or a third of the coconut milk next time.

Grilled Fish Tacos with Chipotle-Lime Dressing

A new favorite, no doubt. I took the advice of many people saying it had too much lime and just withheld lime from the dressing. i kept the marinade the exact same. SOO soo good all together.

Cajun Chicken Pasta

Simple and tasty, this recipe will impress guests and make you glad it's not complicated. Don't be shy with the cajun, it makes it so good! Some of my friends specifically ask I make this now.

Cha Cha's White Chicken Chili

This is awesome. Definitely watch the amount of water, it will determine if you have a hearty or soupy chili... I like mine extra hearty, so I took someone else's advice and I always blend one can of the northern beans. MMM!! I usually half the amount of jalapenos too, out of consideration for others. =)

Find the right ratio of spiciness for you. Try carving out all but one of the veins for example... when you leave in too much it's almost unbearable, and if you take all the heat out it's no fun! Very important balance.

Slow-Cooker Chicken Tortilla Soup

This is one of the best recipes I have ever come across. Honestly, make it like the recipe says or make a few adjustments, and it will still taste as great. WARNING if you want it to be a huge let down, use green enchilada sauce instead of red. This is awesome!! I make it rather often now because everyone loves it so much!

Cinnamon Belgian Waffles

This is the perfect light and FLUFFY waffle. I'm going to try a few other recipes to see if I can find one this tasty but a little heavier/more substantial... however, if you like your waffles as light as the whipping cream on top of them, look no further.

Chocolate Chip Peppermint Cookies

Seriously, people LOVE these cookies. I make them to give people around Christmas time, and it doesn't matter whether they are hot or not, you will make new best friends if you give someone these cookies. They're DELICIOUS.

Drumsticks with Peach and Honey

This recipe is "just okay" as another reviewer aptly put it. Nothing to brag about, it's not delightfully infused with this delicious peachy taste... maybe if you double the peaches and the honey and marinate everything a really long time... I don't think I'll be making this one again though.

Pumpkin Waffles with Apple Cider Syrup

This could stand to be more pumpkin-y and sweeter as a waffle by itself. However, coupled with the apple cider syrup... it's awesome. I made it exactly as it said, and it turned out great.

Whole Wheat Pancakes

Don't use this amount of milk. I usually end up using about hald the amount, but it's easiest to start with a cup, mix it in, and then add milk until you achieve the consistency you want. Also, I use 2/3 cup on whole wheat flour and 1/3 cup of flax seed, to make it extra healthy. Also, since they area so healthy I throw in a half a bag of chocolate chips, too. (A whole bag when I double the recipe, which is OFTEN! =D) Last of all, these pankcakes are AWESOME to freeze in a sandwich-size plastic bag and then stick in the toaster on another morning. My husband and I usually have these a couple times a week as a result. So good!

Easy Cheap and Yummy Casserole

I did as some said and put a small amount of cheddar cheese between the beans and hotdogs. I actually halved the entire recipe and put it in a 8"x8" dish which worked well for my husband & I. SUGGESTION: Try using Chile Beans instead of Baked Beans. Chile beans makes it more like a chile & cornbread meal, and just better. I added extra spices to my can of Bush's Chile Beans (cumin, chile powder, and a little cayenne pepper)... it was good! Nothing I'd make if we had guests coming, but totally worth it for about $2 per person! Thanks, Xekoliara!

Brown Sugar Meatloaf

"YUM" - I used muffin tins since I was short on time (took 30 mins. in the oven instead of an hour!), and I halved the BS (brown sugar, that is). ;) Paired with homemade mashed potatoes and some green beans, husband said "You outdid yourself." The best part was, this meal was more simple to make than most!

Deep Chocolate Raspberry Cake

This cake has a smooth, dense, and crumbly texture as opposed to a springy box-cake texture. It's the kind of cake that makes you want to close your eyes and savor it slowly. Very deep chocolate balanced nicely with raspberry.
