I say use the following ratio instead: 16 oz fully cooked smoked sausage, 2 medium size onions, 3 large potatoes, and 3 green bell peppers. To use one pot for this is a bit ambitious. You can, but by the time you stir everything around enough for the onions and bell peppers to cook up nicely you've somewhat mangled the potato cubes. I suggest cooking up the potatoes in a large pot and at the same time basically stir frying your sausage, onion, and bell peppers. Also, if one gets finished before the other you can turn it to low that way and avoid mushy veggies. Honestly I put just a light sprinkling of salt on the potatoes twice, and the recipe tastes great without any additional seasoning!

Chicken Biscuit Pie

As an apple crumble is to an apple pie, this recipe is to a pot pie. Unfortunately, this is a little on the bland side, although still enjoyable enough to try again with variations. I like that it tastes like a pot pie, but the biscuit mix as written isn't very exciting. Additionally, the ingredients should list 1/2 an onion as a whole onion ends up being more than either the carrots or peas! I like the idea of this, but I'm going to look for a different biscuit recipe and a chicken potpie filling to find how to make this better.

Vegetarian Penne

This definitely took longer to prep than listed with all the squash cutting up. It's missing something, and I think 1 teaspoon of lemon juice was just the ticket! A little bit of lemon enhances everything... a better alternative than making it spicy or making it non-vegetarian with cheese! ;) Overall good, especially after the lemon.

Slow Cooker Pepper Steak

This needs a lot of adjusting... I like the idea of it though. If I make it again I may sub a can of pineapples for the tomatoes. Alternatively, if I make it as directed here, next time I will add 2 tablespoons apple cider vinegar, and 1 tbls fresh ginger, minced.

Butternut Squash Soup

I made this just as directed except I only used the amount of butter I felt I needed to saute the onions and I halved the cream cheese as Mary suggested & it was very, very good. This soup has a good seasoning while not masking the squash.

Slow Cooker Latin Chicken

Yum! A definite keeper. I did as others suggested by doubling the broth and the salsa and halving the black beans. I used half hot salsa and half medium and the spiciness was fantastic. We just ate this as a stew... what a good meal!!!

Chilaquiles II

Very easy and very good. Tweak the spiciness to taste. I usually use 2 jalapenos and don't take out the seeds. Also I think monterey jack works best for this.

Blueberry Coffee Cake I

I make this in a regular 9x13 pan and put half of the topping in the middle right after the blueberries. This is so so good. Works well with whole wheat flour, too.
