This is a great, quick bread recipe. This is perfect if you want some homemade bread to go with your meal but don't have the hours of spare time to make it happen. Very tasty! Also, the point of proofing yeast is to make sure it is still active. If you are sure your yeast is active (you bought it from a reliable source yesterday), you don't need to. If you are improperly storing your yeast or it is old, definitely proof it. I have met many people who think that bread will not rise without proofing, but that is simply not true if you know your yeast is good. There are many other reasons bread can fail to rise.
