Buffalo Chicken Soup

This is good. Like others, I bypassed the half n half and used 2% milk at chicken broth. Because I live in Buffalo, I have expectations. I used Franks's wing sauce (Frank's is a MUST when making authentic wings and I used a half cup instead of a quarter. I like my wings very hot. I was only going to give this 4 stars, but I'm eating it while reviewing and it definitly gets tastier after a couple spoonfuls and the heat kicks in. Very simple recipe that I think I will make a few times this winter.

Ham and Pear Panini

Really good and easy (of course, it's a sandwich). I liked it better with a nice sharp cheddar, which I had to use when my mozzarella went bad. But I'm all about intense flavors.

Spicy Lemon Pork Saute

Is there a secret to making this without it being all dried out? Very disappointed. I used boneless pork chops and followed the recipe exactly. Very tough and dry.

Turkey and Quinoa Meatloaf

Ehhhh...I'm not a fan of ground turkey and even less a fan of meatloaf, but I gave this a shot. It's OK. My boyfriend loves meatloaf, so we'll see what he thinks when he tries it. OK, updated after the BF ate some. I added a star - he said it's very good, but we both felt it could use more onion and maybe some green peppers? I don't know. I'll make it again. He put extra hot sauce on it. Really couldn't even taste the tbsp that I'd put in the recipe. Maybe a hotter hot sauce next time? I used Frank's.

Pesto Sauce

I love this really easy recipe and just can't get over how much better making it fresh is than getting it from a jar. I've made this a few times, both using the recipe as is and taking others' suggestions. The As Is is my favorite way. Has the best flavor and texture.

Delicious Grilled Hamburgers

These were excellent. Using the suggestions, I also halved the liquid smoke and used fresh garlic instead of powder. I also put smoked gouda on top and they were absolutely delicious. I used ground bison sirloin. Looking forward to warm weather so I can try these over charcoal.

Colorado Buffalo Chili

This is very good chili. I got about 7 servings out of the recipe (1 cup per serving). Not sure how the nutritional data came up with such a low calorie and fat amount, but it's still acceptable to the diet.

Baked Sweet Potatoes

Very tasty. I left the skin on for extra nutrition and threw in a handful of pine nuts, just because they were there and I like them. Sweet potatoes are so good for you, I didn't want to ruin them with all the extra stuff people are using.

Asian Spinach Salad

Very good and easy!!! Something tells me that once my boyfriend gets here, I won't have any left for lunch tomorrow. I didn't use ramen noodles because I just remember them being so salty when we used to eat them in college. I used crunchy Chinese noodles instead.

Baked Kale Chips

I give this a "baked kale chips... heh.... go figure!" They're very good! Wasn't sure what to expect, but I'm definitely pleased. I used Pam Olive Oil because I figured I'd get more of an even coating, and save calories. And you're right, I couldn't eat just one.

Quinoa and Black Beans

Well, I sort of messed this one up a little because I was short a bit of quinoa and adjusted the broth wrong. And I hate cilantro, so I planned to use parsley... except I forgot to get it. But.... it's still really good! It's really so much easier to eat healthy when there are recipes like this.

Mediterranean Quinoa

Wow! I love this!!! I'm glad I read the other reviews and made it with less broth and more quinoa. I used 2 cups of chicken broth & 1cup quinoa, then took another suggestion and put a little feta on top. I also doubled the garlic because I'm a nut for it. I will be making this one regularly.

Broccoli Pie

It came out watery. The broccoli wasn't completely thawed, so that may be why. My daughter gagged. Since I made it for her, I guess it won't stay in the recipe box

Wild Rice Spaghetti Chicken

Was I supposed to cook the rice first? My batch did not come out with a "thick" sauce. It tastes pretty good but the rice is a little crunchy. Lol. I'm gonna cook the rice first next time I think

Artichoke Salad II
