German Apple Cake I

I followed the recipe exactly, except I put sugar instead of flour in the bottom of my pan...no sticking. The top was nice and crunchy and the middle was so moist and delicious. I used the caramel glaze suggested by another reviewer (1/2 c. butter, 1/2 c. brown sugar, 1/4 cream; boil 3 minutes; take off heat; add 1/2 tsp. vanilla; cool slightly and serve over cake) and the cake went from fabulous to sublime. Wow.

Butternut Squash Pizzas with Rosemary

My husband liked this recipe a lot more than I did. I caramelized the onions rather than roasting them and I should have used twice as many since they really cooked down. They were what made the pizza good, in my opinion. I used whole wheat crust from Trader Joe's and the crust was sort of dull and tough. I did enjoy the pizzas, but I think this recipe could have used something more, maybe some sort of tangy sauce. I might try serving it with BBQ sauce next time.

Garden Fresh Tomato Soup

Very tasty soup. I doubled the recipe (except for the cloves) to have enough for my family of five. There were one to two servings leftover. I felt it needed a little extra zing and my husband agreed. I added a little balsamic vinegar near the end of cooking and also put a tiny dallop of homemade pesto in the center of each serving. This was so much better than canned tomato soup.

Vegetarian Four Cheese Lasagna

The adults in my family loved this recipe. My small children could take it or leave it. I used butternut squash instead of pumpkin and wished I had used more of it. It added a nice touch of sweetness. I made my own sauce from fresh tomatoes from my garden and it was fantastic. I would recommend having some extra sauce on hand to pour over individual slices as desired, especially for the leftovers. The consistency was perfect, not soupy at all, when first served. But I found it dry the next day. I will definitely make this again.

Whole Wheat Honey Bread

I made a few changes based on other reviews. I used half whole wheat flour and half bread flour. I used my bread machine on the whole wheat setting and selected the "light" crust option. I added the honey and the salt with the liquid ingredients first. The loaf turned out lovely. I served it warm with soup. My kids even loved it. It is surprisingly light for a whole wheat bread.
