I am a new cook. I have two small children and have recently taken over (from my awesome husband) the job of meal preparer in our family. I still lack confidence, but I'm getting better as the year goes on.
My favorite things to cook
I love to bake. Fruit pies are by far my most successful accomplishments.

German Apple Cake I
I followed the recipe exactly, except I put sugar instead of flour in the bottom of my pan...no sticking. The top was nice and crunchy and the middle was so moist and delicious. I used the caramel glaze suggested by another reviewer (1/2 c. butter, 1/2 c. brown sugar, 1/4 cream; boil 3 minutes; take off heat; add 1/2 tsp. vanilla; cool slightly and serve over cake) and the cake went from fabulous to sublime. Wow.

Butternut Squash Pizzas with Rosemary
My husband liked this recipe a lot more than I did. I caramelized the onions rather than roasting them and I should have used twice as many since they really cooked down. They were what made the pizza good, in my opinion. I used whole wheat crust from Trader Joe's and the crust was sort of dull and tough. I did enjoy the pizzas, but I think this recipe could have used something more, maybe some sort of tangy sauce. I might try serving it with BBQ sauce next time.

Garden Fresh Tomato Soup
Very tasty soup. I doubled the recipe (except for the cloves) to have enough for my family of five. There were one to two servings leftover. I felt it needed a little extra zing and my husband agreed. I added a little balsamic vinegar near the end of cooking and also put a tiny dallop of homemade pesto in the center of each serving. This was so much better than canned tomato soup.
