Crustless Spinach Quiche

This recipe is easy and so delicious. Last summer, we kept a foreign exchange student who was vegetarian, and this was the perfect recipe for her - delicious, healthy, and easy! She loved it, and my 17-year-old daughter who usually doesn't like spinach tried it, and she has asked for me to keep making this dish. I used a combination of cheeses that I had on hand, and it was very good.

Chocolate Chip Pumpkin Bread

This bread was sooo good! I sub in our girls' middle school and the elementary school. I notice that many parents and kids bring treats to the elementary school teachers but not so much to the middle school teachers. A few weeks ago, we had open house at the middle school and I decided to make a mini-loaf of this for all my girls' teachers - about 10 of them altogether. The next week when I subbed again, ALL of them thanked me profusely and asked me for the recipe. I just carried around copies of the recipe with me for 2 days! My kids devoured the 2 loaves we kept for ourselves. We will definitely make it again!

Broccoli Shrimp Pasta Toss

We have a family of six and everyone really liked this recipe - there was none left. The only broccoli I had was a bag of frozen broccoli "Steamers" in a light cheese sauce. I cooked this according to the package directions and then added it to the onions, garlic and shrimp in the sauteing butter before tossing in the pasta. Wow! It gave it a great flavor - not too cheesy but the perfect consistency, and it was so easy! If you like a lot of broccoli, I would probably used 2 bags of the "Steamers." I used the penne pasta. We all enjoyed this quick dish!

Baklava

This was excellent! My daughters ages 11 and 13 helped me put this together for Thanksgiving. My mom and other family members were doing the traditional desserts so we decided to do something a little different and bring this Baklava. I have always loved Baklava but had never made it. It was not only delicious but was a lot of fun for our girls to make. We took the great idea of melting the butter and spraying it onto the phyllo and that worked out wonderfully. However, we didn't use all the butter the recipe called for. We will make this again.

Broccoli Salad I

This is a wonderful salad! Every bit of it was gone when I served it to guests last week. I didn't have any sunflower seeds so substituted slivered almonds and it was well-received. I'll definitely make this again. My husband isn't a huge veggie fan, but he had several helpings of this salad!

Scalloped Potatoes and Onions

These potatoes were wonderful. The perfect texture and flavor. I added some cheese to the top at the end and everyone in my family loved them. No leftovers! I'll definitely make them again!

Angel Food Cake III

Refried Beans Without the Refry

These beans were wonderful. I am living abroad and can't buy the canned type, so I cooked these overnight in my crock pot, and then mashed them up to make them smooth. They smelled wonderful as they cooked. I might cut down on the onions, but my variety may have been a little stronger than some. I made a delicious layered bean dip with these and all my guests loved it.

Pecan Pie V

We are living abroad and don't have access to many ingredients. So I was thrilled when Mom sent some pecans to make a pie, only to realize that I also couldn't get corn syrup, and that's too messy to ship! So we tried this recipe and it was fantastic. Took it to our American Thanksgiving celebration and everyone loved it. This was yummy and I have already shared the recipe with 2 friends.

Best Spanish Rice

We are living in Russia and so I've had to make most everything from scratch lately! We love Tex-Mex food and so I tried this rice recipe and it is fabulous. It has the best flavor! My husband and family love it - I've made it 3 times already, so now it is a staple with our Mexican dishes.

Chocolate Bar Fondue

Fabulous! I was looking for a relatively easy chocolate fondue that we could use in our new fondue pot. I made this for my friend's birthday party, and it was the hit! The chocolate has the perfect consistency - we'll definitely use it again. We dipped angel food cake, marshmallows, and fruit - yummy!

The Best Banana Bread

I've made this banana bread several times now, and every time it has turned out great! It is always so moist and that's the way I like it best. Many recipes leave banana bread dry, but this one was perfect. I also sprinkled cinnamon-sugar on the top of the loaf before I cooked it, and it was yummy! This is one of our favorites!

Banana-Zucchini Bread

This was wonderful. I used only the banana and zucchini and not the other fruits,and it was moist and delicious. Plus, the whole house smelled great while it was baking. I used my bundt pan and baked it altogether in that pan, and it turned out beautifully. The two friends I shared it with, asked for the recipe.
