Crustless Spinach Quiche
This recipe is easy and so delicious. Last summer, we kept a foreign exchange student who was vegetarian, and this was the perfect recipe for her - delicious, healthy, and easy! She loved it, and my 17-year-old daughter who usually doesn't like spinach tried it, and she has asked for me to keep making this dish. I used a combination of cheeses that I had on hand, and it was very good.

Chocolate Chip Pumpkin Bread
This bread was sooo good! I sub in our girls' middle school and the elementary school. I notice that many parents and kids bring treats to the elementary school teachers but not so much to the middle school teachers. A few weeks ago, we had open house at the middle school and I decided to make a mini-loaf of this for all my girls' teachers - about 10 of them altogether. The next week when I subbed again, ALL of them thanked me profusely and asked me for the recipe. I just carried around copies of the recipe with me for 2 days! My kids devoured the 2 loaves we kept for ourselves. We will definitely make it again!

This was excellent! My daughters ages 11 and 13 helped me put this together for Thanksgiving. My mom and other family members were doing the traditional desserts so we decided to do something a little different and bring this Baklava. I have always loved Baklava but had never made it. It was not only delicious but was a lot of fun for our girls to make. We took the great idea of melting the butter and spraying it onto the phyllo and that worked out wonderfully. However, we didn't use all the butter the recipe called for. We will make this again.
