Strawberry Jam
This jam is amazing. I had four pints of strawberries that would have gone bad if I did not do something with them soon. I followed the recipe but added the juice of half an orange since I only had about 1/8 cup of lemon juice. I boiled in a large enameled cast iron, five quart pot (went slowly from low to medium high) for about 1 hour, until the mixture was reduced by more than half. I think this eliminated the "runny" texture some experienced. I also filled the canning jars almost to the top and then turned upside down. So much easier than the boiling water method. Besides, I don't think this jam will last long enough to go bad! Made the "Old-Fashioned Strawberry Shortcake" from this site (but as more tradisional individual portions) and the jam spread on these, just cooled from the oven, was a real treat. Will definately make this again.

Broiled Tilapia Parmesan
This is a wonderful recipe. My roomate, who does not particularly like fish, kept telling me how much she liked it and said I could make this any time! I did not have celery salt or basil. Instead, added two cloves of crushed garlic and a bit of garlic salt, as well as two teaspoons of dried Italian seasing. I also did not have plain parmesan so used a four cheese Italian blend. Followed another reviewer's advice and added bread brumbs to the mixture after the original mixture started to slide from the hot fish. This is a keeper!

The Best Parmesan Chicken Bake
This is the first time I have rated a recipe and the best thing I can say is that the chicken came out tender. Otherwise, it was a waste of time and good ingredients.
