Almost No Fat Banana Bread

Reviewed: Jun. 14, 2010
This bread is deliciously moist, and even better the next day. It's also a healthier alternative to quick breads made with oil and whole eggs. Next time I'll have to try it with wheat flour!

I did not make this personally, but a coworker brought this into work....it was delicious! I love that is different from your traditional pumpkin breads and pies.

Zucchini Brownies

Reviewed: Jan. 14, 2010
I don't know what I did wrong, but these turned out a lot more gooey than expected...not that it made any difference on flavor. Loved them! They seemed like they hadn't cooked long enough, but my oven was burning the top before the middle could finish baking. Next time I'll have to use a different oven.

Slow Cooker Beef Stew I

Reviewed: Jan. 14, 2010
This was very tasty. Nice and hearty, and thick the way stew is supposed to be, not soupy at all. I will make this again.

Adrienne's Cucumber Salad

Reviewed: Jan. 14, 2010
This was just ok, I felt the onion was a little too strong. We just didn't care for it a whole lot. Different strokes for different folks.

Corn and Black Bean Salad

Reviewed: Jan. 14, 2010
This is delicious. A great cool side dish or easy snack for tortilla chips. I added green pepper for color and flavor, but other than that, the ingredients were spot on, even before it had completely marinated. Two thumbs up!

Balsamic-Glazed Salmon Fillets

Reviewed: Jan. 14, 2010
This salmon was excellent! I doubled the sauce recipe for extra to go over the brown rice I served with this. My boyfriend and I both lapped it up. I will make this again, no changes necessary!

Alaska Salmon Bake with Pecan Crunch Coating

Reviewed: Jan. 14, 2010
This could've been better. I had issues with keeping the topping from overbaking in my uncooperative oven, so the final product ended up being dry. Boyfriend wasn't thrilled about the flavor either. Sorry! It's a good base to start from though.

Excellent, but extremely rich. These were a snap to make. My boyfriend made me make a pan just for him after christmas, much to my delight. He loves it!

Caramel Apple Bars II

Reviewed: Jan. 14, 2010
These were good, but gooey and messy. I tried to help keep them together by doubling up on the crust for more support. I also added a couple spices to the apples to give them more flavor.

Golden Pork Chops

These were ok. There was something about the sauce that didn't quite hit the spot.

Chocolate Trifle

Reviewed: Dec. 14, 2009
This was DIVINE. I took a couple suggestions on this. I subbed the 8 oz. of whipped cream for the handmade stuff, whisking heavy cream, 2 Tbsp sugar and a tad of mexican vanilla together. This gave the chocolate pudding wonderful flavor. I also left out about 1/4 cup of the water and used irish cream liquer in its place and sprinkled heath bits over the brownies when I layered everything up. EXCELLENT substitutions if you want more depth to your already decadent dish and very pretty!!

Libby's® Pumpkin Roll with Cream Cheese Filling

Reviewed: Nov. 20, 2009
This was excellent, my first time making a jelly roll type confection and it came out beautifully! I would recommend cutting down on the powdered sugar a little in the filling...it seemed "off" or a little too sweet or something. I added just a couple more spices to the pumpkin roll to bring out more flavor, including fresh grated nutmeg. yum!

Chicken Pot Pie VIII

Reviewed: Nov. 18, 2009
Since I was short on time, I did not make the pie crust, I used store bought. As per other reviewers, I softened up the carrots and potatoes some so they would not come out too crunchy, and they ended up with just enough tooth to them. I did not have mushrooms, so I added corn to make up for it, and I used red potatoes instead of russets. I also added garlic powder and poultry seasoning, and I really enjoyed the additional flavor it gave! Overall, a good recipe I can use for a base! Very creamy, very hearty, very stick-to-your-ribs!

Caramel Bars

Reviewed: Oct. 26, 2009
These were really really tasty without being wayyy too sweet...perfect for a sweet tooth. Since I saw this bar was hard to keep together, I made 1.5 times the crumb recipe, and used the half recipe for the crumb topping, using all of the original amount for the bottom of the pan. I also melted a little extra caramel to cover to the sides. It also helped to spray the sides of the pan with cooking spray to keep the caramel from sticking afterwards. Also, you can score the bars while still warm, but wait to cut them until they have cooled completely, to avoid a gooey mess. I ran a knife under hot water and cleaned off any gunk after each cut, and that seemed to help out a LOT. Great recipe! I'll be making this again!

One-Dish Chicken and Stuffing Bake

Reviewed: Oct. 15, 2009
This dish is what made my boyfriend REALLY love me when we first started dating... it's one of his favorite things for me to make, and it's so simple! For added flavor, I always sprinkle the chicken with Poultry Seasoning before covering it with the soup mixture, and I add a little bit of garlic powder, paprika and a dash of chili powder to the soup mixture to give it more "oomph". I almost always add shredded cheese to the top before popping it in the oven to give it some nice gooey, cheesiness. Tastes great with roasted red potatoes!!

Cabbage Fat-Burning Soup

Reviewed: Jun. 29, 2009
I liked this soup a lot, and it didn't leave me feeling hungry. I split this recipe and made it for six servings instead of 15. I only used half a head of cabbage and added extra veggies, including chopped tomatoes, a can of garbanzo beans for protein, and the whole can of green beans. I used half water/ half chicken broth for the liquid to add flavor. I also seasoned with plenty of cracked pepper and garlic powder and it added a nice taste to the broth as well. I didn't have any onion soup mix, so I added a beef boullion cube and minced dried onions as a replacement. In a couple of servings I've heated through with a polish sausage added in, and it makes a very nice addition to the soup. I will make this again! UPDATE: Try adding italian seasoning to the soup while it simmers. It gave the PERFECT flavor, just the touch I was looking for! It's a 5 star recipe with that one change.
