Almost No Fat Banana Bread

This bread is deliciously moist, and even better the next day. It's also a healthier alternative to quick breads made with oil and whole eggs. Next time I'll have to try it with wheat flour!

Zucchini Brownies

I don't know what I did wrong, but these turned out a lot more gooey than expected...not that it made any difference on flavor. Loved them! They seemed like they hadn't cooked long enough, but my oven was burning the top before the middle could finish baking. Next time I'll have to use a different oven.

Slow Cooker Beef Stew I

Corn and Black Bean Salad

This is delicious. A great cool side dish or easy snack for tortilla chips. I added green pepper for color and flavor, but other than that, the ingredients were spot on, even before it had completely marinated. Two thumbs up!

Balsamic-Glazed Salmon Fillets

This salmon was excellent! I doubled the sauce recipe for extra to go over the brown rice I served with this. My boyfriend and I both lapped it up. I will make this again, no changes necessary!

Alaska Salmon Bake with Pecan Crunch Coating

This could've been better. I had issues with keeping the topping from overbaking in my uncooperative oven, so the final product ended up being dry. Boyfriend wasn't thrilled about the flavor either. Sorry! It's a good base to start from though.

Caramel Apple Bars II

These were good, but gooey and messy. I tried to help keep them together by doubling up on the crust for more support. I also added a couple spices to the apples to give them more flavor.

Chocolate Trifle

This was DIVINE. I took a couple suggestions on this. I subbed the 8 oz. of whipped cream for the handmade stuff, whisking heavy cream, 2 Tbsp sugar and a tad of mexican vanilla together. This gave the chocolate pudding wonderful flavor. I also left out about 1/4 cup of the water and used irish cream liquer in its place and sprinkled heath bits over the brownies when I layered everything up. EXCELLENT substitutions if you want more depth to your already decadent dish and very pretty!!

Libby's® Pumpkin Roll with Cream Cheese Filling

This was excellent, my first time making a jelly roll type confection and it came out beautifully! I would recommend cutting down on the powdered sugar a little in the filling...it seemed "off" or a little too sweet or something. I added just a couple more spices to the pumpkin roll to bring out more flavor, including fresh grated nutmeg. yum!
