Cod was on sale but I didn't know how to prepare it (other than fried). This was very good. I decreased the cayenne to our taste and spooned drained diced tomatoes on top. Will serve this again.

Apple Pie Filling

Just made this today. The warm filling tasted wonderful in the pan-I can't wait to prepare my Thanksgiving pie with these! I did decrease the amount of water and halved all the other ingredients because I didn't have 18 cups of apples(I approximate about 12 cups). This is just the recipe I have been looking for.

Roasted Green Beans

I prepare broccoli and cauliflower this way but never tried green beans like this. Way too easy and very tasty-the green beans were even sweeter!

Italian-Style Swiss Chard

This was delicious! I've never prepared Swiss Chard this way (we usually bread and fry the stalks) I highly recommend this-be sure to use a lot of garlic-you can never have too much!

Grilled Vegetables with Balsamic Vinegar

Made this yesterday and it was excellent. All I had was 1 zucchini, 1 yellow squash and a few red and yellow mini bell peppers. Followed recipe as written except vegs marinated longer because we had a later supper than I planned. Great go-to recipe with easily available ingredients!

Chef John's Chicken Cacciatore

This was great! Made a few changes-I didn't have any mushrroms so I added a chopped carrot and some celery. I also added a little red wine with the water. Used 6 large bone-in breasts. Will prepare this again!

Basic Broiled Chicken Breasts

This is a basic fundamental cooking technique. Forgot how tasty chicken is when prepared this way. I added small amount of chicken broth to pan as recommended. Chicken was perfectly done and tasty. Sometimes we overthink the simple things but simple is often better.

Sausage, Peppers, Onions, and Potato Bake

Made this yesterday to bring to a friend (of course I tasted some for lunch) Very good, followed recipe except didn't use any wine. Very good tasting but I did add some tomato sauce at the end just for a little "zing".

Scalloped Tomatoes

This recipe sounded unusual but I was looking for something different to do with homegrown tomatoes. We enjoyed this very much and I will be preparing tomatoes this way again. I halved recipe to serve just 2 people. I did not add mozzarella as some reviews suggested and I'm glad I didn't. This doesn't need the extra calories or sodium. I did use less brown sugar as ripe tomatoes were extremely sweet.

Picnic Cake

Made this for a day of boating. This cake was great-no frosting so it was easy to transport and everyone enjoyed it. Six year old nephew licked the pan! I prepared as written but after reading reviews I took advice and loosely covered with foil after 30 minutes, then baked for additional 10 minutes (40 minutes total) We renamed it "Crater Cake".

Sour Cream Cucumber Salad

Haven't made this in ages but needed cheap, easy side dish for summer party. Everyone seemed to enjoy this. I used chives from the garden instead of green onions. There were no leftovers.

Grilled Portobello Mushrooms

When I read the recipe I thought chopped red pepper was unnecessary but I had some so I tried it as written. The little crunch of the pepper really made this dish tasty and pretty.
