Chicken Enchiladas with Creamy Green Chile Sauce

Reviewed: Dec. 21, 2014
As is, I think the sauce would have been too runny. I decided to add shredded Monterey jack to the sauce to give it a thicker, creamier, consistency. I also added some flavor & heat to the chicken with S&P, smoky hot paprika, cumin, garlic, and cayenne. This was delicious! My tweaked version will definitely go into regular rotation.

This is the same recipe my family has had at Thanksgiving for a long time. So good I crave it all year!

Simple Beef Short Ribs

Reviewed: Aug. 30, 2013
Yum!! Had braised short ribs at one of my favorite restaurants and loved them so I decided to try this at home. I didn't have a stout beer, so I used a Bud Light and added soy sauce (Guinness always reminds me of soy sauce). This was fantastic! Served with garlic mashed potatoes. Hubby loved it.

Old Fashioned Onion Rings

Reviewed: Apr. 25, 2013
I took one of the reviewers advise and used a 1 gallon ziploc bag to do all the mixing. I'm all about less mess. Used cornflake crumbs instead of bread crumbs and Pamela's Baking Flour in place of flour to make recipe gluten free. Terrific! No one would ever guess they were gluten free. So crispy and not greasy at all.

Meatball Nirvana

Reviewed: Jan. 24, 2013
Only change I made was to use corn flake crumbs instead of seasoned bread crumbs to keep the recipe gluten free. This is my new meatball recipe! The flavor was great and the texture was like velvet in my mouth! I was surprised how moist they were and very pleased that I was able to keep it healthy by not using an egg and using skim milk.

Ali's Amazing Bruschetta

Reviewed: Nov. 19, 2011
Yum! I too, after reading reviews, toasted the bread first after brushing with olive oil. Also added minced garlic and a splash of balsamic for a little sweet to bring out the flavor in the tomatoes. This was delish!

Pamela's Ninja Wings

Reviewed: Jul. 3, 2011
I always like to keep to the recipes on here - at least to rate, then I tweak if necessary. Had to give a 3 as is...way too sweet but worked as a nice starting point. I cut the honey back to 1 cup. added rice vinegar (really helped to add tang and balance the sweetness), toasted sesame oil, crushed red pepper, cayenne, more garlic, and a couple of dashes of Mongolian Fire Oil. Instead of cooking in the oven, I first grilled the wings which gave them an added smokiness. I then marinaded them for a few hours and threw them in the oven about 45 min. They turned out fantastic! Took them to a party and everyone loved them! Told me I have to call them Pamela's Ninja Wings. Will customize and add to my recipe box.

Grilled Pineapple Mango Salsa

Reviewed: Apr. 11, 2011
Was looking forward to trying this with red snapper I was preparing for dinner. Made as directed and found it to be just okay. Salt & pepper improved somewhat, but none of my family would do more than try a couple of bites. Will not make again.

Very nice! Prepared as written, but cut zucchini chunky and used marinated sundried tomatoes. Got a hubby thumbs up too.

Emily's Famous Hash Browns

Reviewed: May 9, 2010
Just made this morning. Really good. Added a little heat with some blackened cajun spice and garlic. Also only used about 3 Tbls of oil instead of a cup! Very crispy on the outside and a nice moist almost creamy inside...added Steak & Shake chili on top...YUM!
