Ali's Amazing Bruschetta

Yum! I too, after reading reviews, toasted the bread first after brushing with olive oil. Also added minced garlic and a splash of balsamic for a little sweet to bring out the flavor in the tomatoes. This was delish!

Pamela's Ninja Wings

I always like to keep to the recipes on here - at least to rate, then I tweak if necessary. Had to give a 3 as is...way too sweet but worked as a nice starting point. I cut the honey back to 1 cup. added rice vinegar (really helped to add tang and balance the sweetness), toasted sesame oil, crushed red pepper, cayenne, more garlic, and a couple of dashes of Mongolian Fire Oil. Instead of cooking in the oven, I first grilled the wings which gave them an added smokiness. I then marinaded them for a few hours and threw them in the oven about 45 min. They turned out fantastic! Took them to a party and everyone loved them! Told me I have to call them Pamela's Ninja Wings. Will customize and add to my recipe box.

Grilled Pineapple Mango Salsa

Was looking forward to trying this with red snapper I was preparing for dinner. Made as directed and found it to be just okay. Salt & pepper improved somewhat, but none of my family would do more than try a couple of bites. Will not make again.

Emily's Famous Hash Browns

Just made this morning. Really good. Added a little heat with some blackened cajun spice and garlic. Also only used about 3 Tbls of oil instead of a cup! Very crispy on the outside and a nice moist almost creamy inside...added Steak & Shake chili on top...YUM!

Asian Salmon

Ok. so as I prepared it, WOW! My husband hates salmon and he couldn't get enough. Did make some changes however so can't rate a 5 star. Just got back from a 3 night business trip in Madison, prepped the fish with the marinade (had to sub onion powder for onions) and proceeded to the couch with a cocktail. Realized that I was so tired from my trip, I wasn't up to cooking so I let it marinade over 24 hrs due to sheer exhaustion! Figured I probably ruined it, but wth, threw it on the grille the next evening...the best salmon I've ever had!!! I will always marinade this over night. It was so good I couldn't wait to use the leftovers for sushi, problem was, I couldn't stop nibbling the rest of the evening. No sushi this time :(

Have to give 4 stars the way it is written. Prepared it as written first time and liked it. Decided to use Chef Prudhomme's Blackened Redfish spice instead of mixing the spices in the recipe. Not only did it take less time, but the flavor was really great! I love the corn salsa. I added black beans and it was perfect.

Marinated Tuna Steak

Absolutely 5 stars! My husband decided on a steak when he heard I was grilling tuna. Once it was finished, he was very interested...it smelled wonderful. Tasted fabulous. He loved it too. Used Sashimi grade tuna & served medium. This is one to wow your guests with!

Blackened Chicken

This was really great. The spices had a lot of depth and heat. The sauce/marinade helped bring down the heat a little and created a nice balance. Only needs a little sauce. Next time I will just drizzle on my plate before serving the chicken breasts. Definitely a keeper!

Slow Cooker Italian Beef for Sandwiches

I use beef broth instead of water and serve with roasted red peppers and banana peppers. The sweet & spicy of the peppers with the juicy flavorful beef is amazing. Serious party going on in my mouth! A game day favorite!

Basic Microwave Risotto

The consistency and texture of the risotto turned out great! I may never make the conventional way again! That being said, I only used 1/2 of a medium size onion and it was somewhat overpowering. If I had mushrooms to add I think it would have really harmonized with the onion and it would have been great.

Catfish Cakes

These were really good. I'm wheat sensitive so used Kellogg's Corn Flake Crumbs instead of crackers. Didn't have Old Bay Seasoning so used Chef Prudhomme's Seafood Magic. Other than that followed the recipe and they were crispy and yummy!

Apple Crisp III

Give it a 5* because it's so easy, and tastes wonderful. Took care of my sweet tooth and craving for comfort food all at once! Made just as the recipe reads for my family. They loved it! I'm sensitive to gluten and watching my calories, so I used Pamela's Baking Mix & rice flour 50/50 instead of regular flour. Used Stevia to sweeten. It was great too and without the guilt : )

Toad In a Hole

Easy and delicious. I've been making these since I was a kid myself. We always referred to them as Eggs in a Nest. I prefer to omit the cheese.
