The Miss Elvis Sandwich

With all of the talk about the Superbowl, I've been feeling sentimental about my time in New Orleans. It was just months before Katrina. What an amazing city! While most betting football fans, from what I hear, are putting their money on the Colts, I
think most Americans really want to see the Saints win and New Orleans recover. I'm definitely one of those people.
That being said, I decided this morning to celebrate Fat Tuesday a little early and maybe work some Saints magic...
I tried The Elvis Sandwich. I LOVE peanut butter, but usually avoid it because I've been on a perpetual diet my entire life. Today, I said no more! An Elvis Sandwich consists of peanut butter, bananas, and bacon, on buttered bread and then grilled. Sounds
a little crazy right? In my opinion, pretty darn tasty. Okay, so I did use reduced fat peanut butter, fat free butter spray, and center cut bacon to cut down a little on the fat. I'm calling my version the Miss Elvis, after my yellow Labrador. I grilled
the sandwich without the bacon. I tried a bite just with peanut butter and banana...yum! A little sweet, but good. Added a piece of bacon to my next bite of sandwich...the salty meat did take away some of the sweetness, but also overpowered the banana.
My solution for the perfect sandwich...a bite of my banana and peanut butter sandwich, then a bite of bacon served on the side. Heaven.
My husband wasn't brave enough to try one - coward, but Miss Elvis thought it was the best sandwich ever!
So there it is - the first blog I've ever posted. Hope it brings a smile or two...
