Easy Sugar Cookies

Bland cookies, so I doubled the vanilla & added about 1/4 tsp almond extract. The dough was crumbly (my butter was very soft); I compressed it into a roll in plastic wrap.

Grandma's Gingersnaps

For a bit sharper taste, grind candied ginger (in a small blender jar) to heighten the ginger spice, sprinkel in a bit of cayenne, as well. I used white whole wheat flour in place of enriched white flour. For a more chrisp cookie, roll the dough into a log, wrap, refrigerate for 2-3 hours or overnight, and slice thin. These cookies can quickly overbake. 8 minutes is just about right.

Sweet Potatoes With Feta Cheese

This was not a dish we enjoyed. This recipe had too much tang (balsamic/feta) overlaying the delicate taste of the sweet potatoes. Similar recipes calling for candied pecan bits scattered over the top doesn't help and confuses the palate.

Cashew Cookies

The original recipe is bland. I found it improved with these alterations: increase vanilla to 1 1/2 tsp, increase salt to 1/2 tsp & roast the raw cashews before adding to recipe. Canned roasted cashews would work, too, but do not increase salt if using canned, salted roasted cashews. Baking time is more like 11 -12 minutes than 15 minutes and the flavor intensifies if cookies are allowed to sit 2-3 days.

Bishop's Bread I

You may prefer the Taste of Home or Cooks.com version of bishop's bread; neither contain buttermilk. This dessert is wonderful for those who like the taste of chocolate, nuts and cherries. Dark chocolate mixed with semi-sweet chips is what I prefer in this recipe. The taste deepens if loaf is aged a few days.

It is safer to heat 1/2 quart of the milk, slowly add the beaten eggs to that, and cook at med-low heat for 2-3 minutes. Strain this into the remaining 1 1/2 qta. of milk. Raw eggs can be a problem. Alternately, make sure the raw eggs being used are pasteurized.

What is almond filling--a commercial product? What is the white topping on the squares; is there chocolate under that glaze? What is more authentic, the glaze or the chocolate topping. Are the cookies easily cut into squares without breaking.

Raspberry Sponge Torte

The cake is very good. I prefer the milder taste of mascarpone cheese, even unflavored yogurt (drained then measured, in place of the cream cheese in the frosting. Add sugar gradually if substituting for cream cheese, to find your sweetness preference.
