Sweet Pepper Pasta Toss with Kale

This dish was a great way to eat more vegetables! I used spinach instead of kale, and I used 4 cups of it. The feta complimented the pasta very well. A pinch of cayenne was perfect, any more and it would have been too much. The basil and garlic added a lot of flavor. This will be my go to dish when I feel like I need to eat more greens!!

Kickin' Collard Greens

My first time cooking collard greens - and I picked an amazing recipe!! Definitely needs more bacon - I used 1/2 pound of thick cut pepper bacon for 1 pound of collard greens. Also they needed to cook longer - I cooked mine for about 1 hour and 15 mins before they were soft enough. I didn't have chili flakes so I used just a pinch of cayenne pepper and also used about 2 tbpns of brown sugar to cut the acidity. Great taste!

Pecan Sandies

Very good!! I used 1 1/2 tsp of vanilla extract like other reviewers suggested. Watch the cookies closely - they burn easily! I would suggest either lowering the cook time, the cookies need 10 mins max. They are not as "melt in your mouth" or crisp (but not burnt) as I wanted them to be, not sure what needs to change.

Slow Cooker Pulled Pork

This recipe was easy and great! I used pork butt instead of tenderloin; in a slow cooker the meat cooks for so long that you can use a less premium cut of meat and still end up with very tender and moist meat. Also the carbination on the soda helps tenderize the meat. The pork butt turned out great for a fraction of the cost. Shred the pork when its warm - I cut it into chucnks and cooked this overnight because I didn't want to overcook it (pork can get gummy and rubbery when cooked for more than 8 hours in a slow cooker). I refrigerated it while I was at work and it was difficult to shred when it was cold. I would also suggest using 3-4 pounds of meat and doubling the rest of the ingredients. This makes pretty small servings otherwise. Overall, a very easy and inexpensive meal!

Corn Chowder I

Nice base to start with. ***THESE REVISIONS ARE FOR MAKING HALF A RECIPE*** - half made enough for 5 side servings or about 3-4 meal sized servings. Used double the potatoes, it provides more substance. Also, I used about 3/4 of a 16oz bag of frozen corn - just put it in frozen. The recipe was too bland as is, I added more salt and pepper (to taste) and at the end, melt about half of a block of grated cheddar cheese into the soup. Doesn't warm up so well in the microwave but does great on the stove.

Kai Kang Dang (Chicken Curry with Coconut Milk)

Tastes like takeout! The changes I made - I used two cans of coconut milk (light works fine), 1.5 times the amount of curry (I like spicy!), and about 1.5 cups of broccoli that I boiled for about 3 minutes and then drained. I added the veggies too early, if you use fresh ones like me wait until the last 5 minutes of cooking, they get mushy fast. Overall, great recipe and I'll consider making this next time instead of ordering takeout!

World's Best Lasagna

Best homemade Sauce EVER!! This took a little work to assemble, but this is a great recipe for two people to make! The changes I made: used 0.5 lbs mild italian sausage, 1 lb ground beef, no fennel seed, and maybe only 2 tsp of salt to the sauce. Great recipe for large groups or leftovers!
