Never Fail Pie Crust II

Great pie crust. I used it for a chicken pot pie and only made an 8x8 so I had some dough left over. I used it to make mini apple pies in my muffin tin. Great thing is you don't need much of a recipe for that because you just make as many as the dough will stretch or only do 2 or 3 at a time and freeze the rest of the dough either rolled out in small discs and put between wax paper or just in a ball. I do this a lot and send the mini pies with my husband for work in his lunch. Thank you for such an easy pie crust.

Big-Batch Butterscotch Cookies

I wish I would not have added the butterscotch chips, or maybe there were just too many. Both my husband and I disliked them. On the other hand, I did make the whole batch but halved it in two bowls before adding the morsels. In the other I chopped up some left over mini peanut butter cups from another cookie recipe and since there were not enough, also added some milk chocolate chips. Now THOSE cookies are good. It is not the recipe that was not liked by me but the recommended addition from the reviews. Therefore I am still giving it 5 stars. The cookie wanted to spread a little so after seeing that on the first batch I put the remaining dough in the refrigerator between batches going in and it helped a lot. Thank you for posting. It is perfect just like you said it was.

Marbled Almond Roca

This is an excellent recipe for Roca! I read a review that stated hers turned out chewy and it is most likely because it wasn't heated long enough to the crackle stage which is 300 degrees. Here is a tip if you are unsure or even if you may have a candy thermometer that is not accurate. Set a glass of ice cold water next to your work station. When you think it is done dip out a small bit (1/2 tsp is enough) and quickly drop it in the water. Wait almost a full minute then take out. Throw it into you sink. If it shatters or cracks, it is done. Also when making candy it is not recommended to ever double the batch but to make them individually, otherwise it may not turn out right. Also, you may run into trouble if you try making this or any candy for that matter on a humid or rainy day. Sugar is hygroscopic which just means that it pulls moisture from the air making your candy more on the chewy side or harder to set up. I let mine finish up in the fridge because it was in fact raining here and I didn't have a problem. I do think that this recipe was written very well in an way that helps avoid some major roca blunders. Thank you, I have already added to my recipe box!

Sour Cream and Chive Mashed Potatoes

I fed several people on these but of course had to more than double the recipe in order to do so. The only change I made was I left the skins on the potatoes. Scrubbed them really good with my veggie and fruit wash, chopped them up to boil just like normal and I used my hand held electric mixer to blend them. They were a huge hit. I served them with chicken cordon bleu, the sweet rolls from this site and asparagus. Topped the meal off with the berry shortbread dreams cookies from this site also. All were wonderful and well worth the work!

Berry Shortbread Dreams

I was very busy in my kitchen when I made these. I was cooking for friends and made a time consuming meal. I quickly got my cookie dough made which was easy with the minimal amount of ingredients that it took and threw it in the freezer so I could get back to cooking. About an hour later I got them rolled out into 1" balls and put the raspberry preserves in them. They were on parchment paper to save time. I let 3 pans set out while finishing my meal because there wasnt room in my freezer to put them back in. I was very worried they would spread when in the oven because they got soft again but didn't have a choice. As soon as my rolls came out of the oven I tossed the first sheet in. (temp was same for both rolls and cookies) They came out PERFECT! Everyone loved them and I put what was left in a lock n lock container. Today they still held their crunch and with the jam in the middle, gave them a really good difference in texture. My husband made a pig of himself on them and thats good enough for me. I will be making them again...and again. Thanks for the great recipe.

Soft Giant Pretzels

It makes 8 but that is not enough when you take that first bite and are shocked to find that yes, they do taste just like the soft pretzels you can get at the mall. It then made me want to share with everyone so after making my first batch just hours ago I am making another but doubling it after dinner tonight. I gave them an egg wash on 6 of them. After baking I used spray butter to wet them and then sprinkled them with my course sea salt. My 4 yr old wasn't crazy about them so on the last 2 (that he made himself and germed up lol) we put cinnamon and sugar on them and hmm guess what?! His are now gone. Great recipe, thank you so much!

Cola Sauce Chicken

I have heard several people say "you should cook chicken in cola! It makes it so good!" I had some chicken breasts and needed an idea, saw this and thought...ok. A previous reviewer didn't like it at all saying it was way too sweet b/c of the cola. I wondered if she had used regular. I had a diet and thought well maybe it won't be as sweet. I am not a picky eater but I found out tonight I don't like my chicken sweet unless it is a typical chinese dish. All a matter of preference of course. This is not a bad recipe. The flavor was very good, just too sweet for my liking. I won't make it again but finally my curiosity involving the cola is satisfied :D

Greek Chicken Pasta

I made this a little different, but not to take away from the recipe. I chopped sun dried tomatoes up and put them in at the same time I put the onion and garlic in. I, like others used canned diced tomatoes pre-seasoned in the can with garlic and olive oil. I did add a small can of sliced black olives also. They didn't have any marinated artichoke hearts at the store which irritated me so I had to stick with plain & canned when I prefer the ones in the jar. It still turned out great. The other reviewers mentioning it being dry was also a problem with me. Not so much when we sat down to eat, it was delish, but I knew pasta really soaks up juices and that sending it with my husband the next day for lunch could be a let down so after dinner I added another can of diced tomatoes, a bit more olive oil and a small can of tomato sauce..(heating it back up to blend well) I taste tested it and it was better. I saved this recipe and will at least have it once a month. Thank you

Slow Cooker Chicken and Dumplings

This was my first time making chicken and dumplings and I felt guilty that I was taking the easy way out until I ate some. It was just as good as my grandmas, who spent quite a bit more time on hers. My husband had never had it so he couldn't compare but really liked it too and went back for seconds. Thanks for the great and simple recipe. Its something different from the usual soup or chili on a cold day.

The Best Rolled Sugar Cookies

I highly depend on reviews before I buy, bake or cook anything. Amazon is my go to for non food items and this site is my fav for food. Again, I have not been steered wrong. I have tried several sugar cookie recipes and have always needed icing on the cookies to enjoy it. I was shocked and thrilled when I took a bite of one from this recipe without icing and found it....well just yummy! I won't need to look any further for the perfect sugar cookie recipe. I just found it!

Quick and Easy Pizza Crust

This recipe is so easy to make! The texture and taste makes it a perfect pizza dough. I didn't notice the lack of flavor that was mentioned in previous reviews but then, I loaded it up with hamburger, cheese, tomatoes, bell pepper, jalapeno and banana peppers. YUM! So maybe that made the difference. Anyway, deffinitely adding this to my counter recipe box!
