Chocolate-Zucchini Cupcakes

These cupcakes are excellent! The only variation I made was I substituted unsweetened apple sauce for the oil and added another square of unsweetened chocolate.

Nana's Christmas Stollen

I wish I had read all the reviews and taken heed on the amount of flour going into my bread machine. It rose, spilled out all over and made one heck of a mess. I salvaged what I could, and the stollen turned out very nice! A word to the wise: keep checking the machine to see how the dough is rising. The next time I baked this, I dumped it out onto my floured board when it began to get out of control. Then just kept adding flour until the consistency was right. This is a good recipe - just not for cooks who freak out when the dough gets yucky!

Oven Roasted Red Potatoes and Asparagus

Blueberry Scones

As with all scone recipes, adding just enough of the liquid to make a nice dough is the key to not ending up with a gloppy, hard-to-work-with mess. I added 1/4 C flour and used regular whipping cream - starting with 1/2 C and adding more to work the dough. I've been making scones for over 10 years - this is a wonderful, easy recipe!

Spicy Sausage Quiche

Mozechilli Casserole

Wow! Talk about a great way to use leftover spaghetti sauce! I can't believe how easy this was to make, and my family really enjoyed it. My homemade sauce already had ground turkey, onions and spices in it (plus some cooked carrots in a tomato base), so I didn't even need to brown any meat. This is definitely a keeeper!

Salmon Chowder

Delicious Chicken Casserole

I made a few modifications to this recipe, which turned out wonderfully. I added some frozen corn, chopped celery, and doubled the rice. My family loved it and asked me to try some different vegetables next time. Easy to make and a real crowd pleaser!

It's Chili by George!!

I admit I made some changes - mostly because I didn't have all the ingredients. I used ground chicken, stewed tomatoes (instead of tomato juice), omitted the pinto beans, doubled the sugar and added a clove of chopped garlic. I served it over white rice and my family loved it!

Simple Whole Roasted Chicken

I doubled the spices/sugar too (as suggested by another reviewer). The chicken began to brown too quickly so I covered it lightly with foil for the last 30 minutes. It came out tender and juicy - family and guests loved it!

Tart Lemon Triangles

I've tried this recipe twice and it just doesn't come out as tart as I would like. I am going to cut the sugar down - maybe 2/3 cup - so see if that will do the trick. Be sure to use fresh lemons for the juice and zest!

Sausage Mushroom Quiche

I cut the recipe in half in order to make one quiche. Be warned! The filling is not enough to cover a 9 inch pie crust! Still, my family enjoyed it and I think it would be very tasty with some different touches (spinach or maybe chopped broccoli).

Banana Chocolate Chip Cookies

As suggested, I reduced the baking powder to 1 t. and used 1/2 C sugar and 1/2 C brown sugar. Perfect! I just need to stop eating them long enough to get them into the cookie tin!

Zucchini and Potato Bake

I made a few changes: I sliced the potatoes a little smaller for faster cooking, added some chopped asparagus (just because I had some leftover), and cooked it at 375 degrees for about 45 minutes. My family raved about it!

Cheesy Baked Cauliflower

I made this for a crowd and it was a huge hit. Even those at the table who weren't big cauliflower fans wolfed theirs down. I added a little extra Parmesan cheese, but otherwise followed the recipe. Definitely a keeper!
