Crustless Cranberry Pie

I followed the recipe exactly an this was a huge hit with my family at Christmas dinner. Easy to make, and served it up with fresh whip cream. Will definitely make again!

Pear Coffee Cake

I used canned pears, apple sauce instead of vegetable oil, half brown sugar & half regular sugar. Didn't have any dates, so used dried cranberries instead. Baked it at 325 degrees for 40 minutes in a 9x13 pan. DELICIOUS!

Huckleberry-Lemon Scones

I've been a baker of scones for almost 20 years and this recipe is absolutely a keeper. Those who worry about the "too wet" dough should add only the amount of liquid (eggs/cream/zest) that is needed to make the dough easy to handle. But if you pat it out on a floured surface, that shouldn't be a huge problem for most cooks.

Sausage Mushroom Quiche

I added more fresh mushrooms and also some asparagus cut into bite size piece, and cooked them in the pan with some ground turkey sausage. It came out delicious and got rave reviews from the family!

Christmas Seafood Casserole

I took some reviewers' suggestions and used 1/2 C heavy cream and 1/2 C milk, mixed with a can of cream of mushroom soup. I didn't mix in any flour or butter, but did add some shredded cheddar cheese. I poured the "casserole" over cooked white rice and the family absolutely loved it. Reheats well too.

Baked Teriyaki Chicken

I've tried numerous teriyaki sauce recipes and this is the BEST, by far. Just make sure that it simmers long enough to thicken - don't be too anxious to take it off the stove or it may turn out to be runny.

Homesteader Cornbread

I took other reviewers' suggestions, using 1 C of mixed sugars, 2 C of cornmeal, 1-1/2 C of flour, then gave the cornmeal/milk a good 10 minutes. I baked it in a glass dish at 375 and it came out very nice.

Taco Bake

I used ground chicken instead of beef, and added frozen corn and zucchini while the dish simmered on the stove. It was a little too spicy for my husband, but my son lapped it up like it was his last meal!

Buttermilk Cinnamon Rolls

Not sure why some people had so much trouble. This is really an easy recipe and only requires that you keep adding flour until you get a nice texture to the dough. I followed the advice of one reviewer, adding extra cinnamon and some sugar to the dough. I also brushed melted butter on the dough after rolling it out, then sprinkled a mixture of 1/2 C sugar, 1 C dark brown sugar, 2 t. cinnamon and 1/2 C raisins on top then rolled the dough. For a topping, I melted butter in the pan, sprinkled it with brown sugar, and placed the cut rolls on top (the rolled dough is easy to cut with an 18" piece of dental floss - just slide it underneath, bring both ends up together and cross them to cut through neatly). Now if I can figure out a way to use this without the oil, I'll have a real keeper!

Caper Baked Chicken

I used chicken legs as that's all I had in the fridge, and I followed the suggestion to use 1/8 C of steak sauce. I also added some artichoke hearts the last 10 minutes of baking. My family LOVED this dish!

Blueberry Coffee Cake I

I followed the suggestion of adding 3/4 C milk and cutting down the amount of topping. I also used nonfat milk and egg substitute, and I added the topping in between layers. Baked in a bundt pan and it came out moist and delicious. I didn't even need a dusting of sugar. Definitely a keeper.

Cheesy Baked Cauliflower

I made this for a crowd and it was a huge hit. Even those at the table who weren't big cauliflower fans wolfed theirs down. I added a little extra Parmesan cheese, but otherwise followed the recipe. Definitely a keeper!

Zucchini and Potato Bake

I made a few changes: I sliced the potatoes a little smaller for faster cooking, added some chopped asparagus (just because I had some leftover), and cooked it at 375 degrees for about 45 minutes. My family raved about it!

Hawaiian Banana Nut Bread
