Orange Mango Chicken

My family thought this recipe was to die for. I had extra mango sauce left over so I used it on salmon fillets and that was a huge his also. I have added this to my recipe box - a definite keeper!

Slow Cooker Balsamic Chicken

I cooked this for my family and thought it turned out quite nicely. I took another reviewer's advice and mixed everything together before pouring it over the chicken. I cooked split boneless breasts on low and they were done in 2-1/2 hours. It's an easy recipe to follow and everyone had high compliments for it.

Jon's Corn and Zucchini

My husband and I enjoyed this very much. Naturally I didn't have all the ingredients but I was able to modify it with great success. I used zucchini and yellow crookneck squash, kalamata olives in place of regular black olives, frozen corn instead of canned and Old Bay spice, as I didn't have any Cajun spice. I also cut the butter in half as you can always add more if needed. Definitely a keeper!

Asparagus with Parmesan Crust

Sopapilla Cheesecake Pie

I've made this recipe dozens of times and it receives rave reviews. The only thing I do differently is I don't roll out the dough, but simply press it into the pan. This is easy to make and is a real crowd pleaser.

I've made these in my deep fryer several times with awesome results. They're very tasty with honey and my guests continue to beg for more. The dough keeps well for a few days if wrapped in plastic wrap and stored in the fridge.

Spicy Cheesy Refried Beans

I used regular refried beans (not spicy) and have made this recipe dozens of times with spectacular results. Sometimes I add some frozen corn or use a "Four Cheese Mexican" mix instead of regular cheddar. I've had nothing but rave reviews.

Sweet Italian Sausage Ragout with Linguine

I didn't have any diced tomatoes so I just used a can of tomato sauce, which worked fine. I also substituted Italian style chicken sausage as I don't eat pork. I did find that I needed more olive oil, as the chicken sausage is very low in fat. My husband raved about the meal; it was a huge success.

I used oat bran in place of wheat bran, as that's what I had on hand. I also used apple sauce in place of oil and dried cranberries in place of raisins. The muffins were marvelous! My husband wolfed down four of them and asked me if I'd make another half batch tomorrow night. This recipe is an easy and delicious way to put more fiber in your diet.

Healthier Slow Cooker Chicken Stroganoff

This was very tasty and easy to make. The only change I made was that I noticed that it was looking dry during the last 1/2 hour of cooking on high so I added 1/2 cup of chicken broth and it came out very nice. I do agree that it cooks in about 4 hours - 5 or 6 is much too long.

Pear Coffee Cake

I used canned pears, apple sauce instead of vegetable oil, half brown sugar & half regular sugar. Didn't have any dates, so used dried cranberries instead. Baked it at 325 degrees for 40 minutes in a 9x13 pan. DELICIOUS!
