About this Cook
i love food, i love planning and preparing food, getting creative, trying new things and sharing with my friends and family :) I'm trying to eat healthier, so I like to modify recipes to cut back on the fat when I can. I think I have a good sense of humor. Im silly, I love to laugh, spend time with family & friends, enjoy a good cocktail hour and love travelling.
My favorite things to cook
Enchiladas - Pork - Jalepeno Tequila Lime Chicken - Salsa - Guacamole - Potatoes - Eggs. I love when I have the occassion of using my fryer, to make french fries & corn tortilla chips and such and i'm going to try baking some doggie treats for my 2 year old Boston Terrier Mingus

My cooking triumphs
Any time something comes out tasty it's a triumph for me, but I think my most surprising triumph was a shrimp cocktail with a jalepeno, orange & lime salsa, that was a hit at a get together.
My cooking tragedies
I was cooking enchiladas for friends and the sauce came out waaaaay too hot! We all had sweat on our brow the whole meal & despite that My loving friends and husband still ate them.

Chicken Asparagus Roll-Ups
This is excellent. I used light mayo, and didn't have tarragon, so I used fresh basil and garlic salt in the sauce. I also used cayenne to spice as one reviewer suggested. I had 3 medium potatoes to use up, so I cube them and then coated them in the leftover sauce and tossed them in the baking dish with the chicken. Really delish! The timing and temp I think are good! I needed 5 more mins, maybe due to taters. Hubby, Me and Friend Enjoyed!!! Thank You!

Strawberry Spinach Salad I
this dressing is awesome! As a previous reviewer suggested, i cut the sugar to 1/4, and used balsamic vinegar and red onion. I also added a splash or two more of worcestershire and I thinned the dressing out with a little water. It was kinda thick. I didn't have poppy seeds and this was still delish. I added feta crumbles and chicken. I marinated chicken breasts in paprika & garlic salt for an hour, then sauted with red onions frying pan. My hubby and I loved it.
