Fish Tacos

This was AWESOME!!!!! My husband loved it and so did the baby. :) I didn't have the cornstarch so I just omitted it and the batter was fine without it. The batter went on really thick so I scraped alot of it off, it only takes a tiny bit of batter. It cooks really quick. The sauce is AMAZING!!!!! The sauce combined with the beer battered fish really makes this dish! Can't say enough about how good the sauce is...INCREDIBLE! I used a whole jalapeño, about 3.5 inches long, and it wasn't too spicy at all. The capers went in fine, too, and I went heavy on the cumin because I LOVE cumin. I used Mexican crema instead of yogurt and it was great. The consistency wasn't runny, like the recipe said, it was very creamy and delicious. I also didn't have the dill but didn't miss it, perhaps it would have been even more amazing with it, haha! I didn't fry the tortillas, just warmed them, and this all came together so quick, it was great. Oh, also, I didn't deep-fry, I pan fried the fish in whole fillets, then chopped it up to put in the tacos. Great, great, great. I added chopped cilantro and sliced avocado to top the tacos off, and it was a hit!

Carrot, Potato, and Cabbage Soup

20 minutes flat! So easy, so delicious, how can it be this simple!? I followed the recipe exactly except used fresh herbs instead of dried. Great, yummy, picky 3-year-old couldnt get enough! 5 stars.

Southwest Chipotle Chicken

Wow my whole family loved this! My teen daughter is health conscious so it worked for her and the boys loved it too because its delicious! SO so so easy and quick also! I doubled the recipe and used a can of ROTEL instead of the grape tomatoes and omitted the onions but used onion powder. I used the chipotle marinade from this site from the chipotle marinade chicken recipe. Great and everyone is happy! Woohoo! Also cleanup was a breeze! :) Perfect for busy weeknights!

Tangy Pineapple Chicken

Wow, this is great! I cooked the chicken in small pieces also and I cooked it in the pineapple juice. I didn't have thyme so I used Italian Seasoning. I didn't have have cornstarch so that was omitted. I added chopped baby corns and chopped water chestnuts to the rice and this is amazing! The whole family liked it! Great! :)

Baked Fish with Shrimp

Omg I made this for my family and they LOVED it! It literally took less than 5 minutes to put together and pop in the oven, threw this together at 9:35pm after kids' band concert and by 10:00pm dinner was on the table! We will be making this again!!! Oh and I used scallops instead of shrimp and added some Mexican cheese on top and it was AWESOME!

Shrimp Artichoke Dip

Savory Chicken Breasts

omg this is the easiest thing ever and tastes great!!!! you can't mess this up, it is so good and easy. i have made it several times and it always comes out perfect. you can use cream of mushroom or cream of celery soup instead if you want and any kind of cheese you like or whatever you have on hand. comes out perfect every time. i always make home made bread crumbs (easy-20 seconds in the blender) and mix them with them butter and spoon over the chicken and sauce. i serve over pasta with the extra sauce and my kids and my bf ask for seconds every time. you can't go wrong!

Maple Pumpkin Cheesecake

This was the most decadent delicious cake I have ever made. It was a hit and turned out beautifully! I used candied pecans in the sauce and it was awesome! Kids and adults asked for more then one serving of this and it was still good for several days after baking. Awesome, awesome, awesome!!!

Four Cheese Macaroni

This was good when it came out of the oven. The leftovers were not good though. When it got cold in the fridge and then we tried to reheat it it was too hard and didn't work out. It was delicious, though, when just made!
