Sloppy Joes II

I have three teenagers, 14, 15 and 16 and a husband of 18 years. I had already prepared 1.75 pounds of ground beef cooked with an onion and had it previously frozen, waiting for a quick week night dinner. I simply sauted 1 garlic clove (instead of the powder) with 1/2 C green bell pepper (again, previously chopped and frozen, waiting for me.) in 1 Tablespoon of Olive Oil. Once these were sufficiently cooked, I added my pre-cooked ground beef. Once warmed, I added 1 cup Ketchup, 3 teaspoons brown sugar and about a 2 teaspoons of mustard, since I had increased the amount of ground beef. My girls HATE canned & envelope Sloppy Joes mixes. They've never liked Sloppy Joes because of those prepared mixes and my husband joined them in their dislike. Tonight, they fell in love with Sloppy Joes! I haven't heard the end about how great this was! I served it with homemade Mac & Cheese and a pea salad. Week night dinner made easy! Thanks Tamara for a recipe that my family finally agrees on and likes! AWESOME!!!

Peanut Butter Balls III

When my family tried this recipe, it was very dry. There seemed to be too much sugar as well. I've made Peanut Butter Balls in the past and my family did not care for these as much as the ones in years past.

Creamy Chocolate Pudding

This makes a good pudding when you tweak it a little. I use 2 cups milk instead of the 1 can of evaporated. It makes it less thick. After it sets up using the evap. milk it's consistency is undesirable. However, after mixing the dry together in the pot first, then adding 2 cups regular milk and whisking until thickened, works well. I add the vanilla with the milk addition. I also add a pinch of Kosher Salt. The butter is added at the end when the heat and pudding are off the stove. This really is good when made this way.

Baked Macaroni and Cheese III

This recipe makes a lot! I changed things a little, as do most people. I used an 8 ounce block of chedder and an 8 ounce block of swiss. I omitted the parmesean since I didn't have any. I didn't have all the sour cream either, so I only used 4 ounces. To make this not so dry, as others have complained it was, I added an entire stick of melted margarine, rather then the 1 tablespoon it called for. This helped the "dryness" factor and improved the taste a lot. I used italian bread crumbs on the top. The whole family loved this one! Next time, I think I'll make a cassarole out of it with added meat and veggies! YUMMY!

Easy Au Gratin Potatoes

I was not impressed with this recipe. I cut down the recipe quite a bit, to feed only five. I also used Garlic Pepper, rather then plain pepper. It came out watery, not creamy, like Au Gratin potatoes should be. I also cooked it an hour at 400* hoping to crisp it up on top, it didn't work, the potatoes weren't even cooked all the way through, and they were cut 1/4 inch to 1/8 inch thick. I will not be making this recipe again.

Banana Nut Muffins

This will be a great muffin for my husband and kids to "grab n go" in the morning. I doubled the recipe, cut back on the white sugar, added 1/2 C brown sugar, and it gave them a wonderful bronze color and flavor! I omitted the lemon zest, and instead simply added Vanilla Extract. I increased the amount of banana as well, using 4 large ripe bananas. I also added extra walnuts for more protein content. All in all I will probably be making this recipe again. Thanks!

Breakfast Pies

This was a great recipe and fed four of us! I did chose to add salt, pepper and parsley flakes to the egg mixture, to add more flavor. I opted to make Sausage Gravy with it as well has browns with onions and bell pepper in it. I used Red Bell Pepper instead of Green for the sweetness for breakfast. The husband LOVED it and said it's a keeper! The kids asked if we can still keep my Biscuits and Gravy the way we had it. They said it was good, but preferred mom's old stand-by. Though they did eat it all! I also added more cheese, onion, and bell pepper then the recipe called for. All in all, I will be making this again, though probably tweeking it to the family's likes a little better.

This recipe made two wonderful deep dish crusts using jelly roll pans. It raised GREAT and tastes fantastic! A definate must try.
