Sweet and Spicy Pumpkin Seeds

After trying several of the pumpkin seed recipes on this site, I combined a couple of them and we finally found our favorite. This one is the closest. The alterations I made are, omit the salt and use 2tsp of garlic salt instead. Omit the hot sauce and use 1/4 cup old bay seasoning instead. We cant wait to carve pumpkins each year to get the seeds. But I have used already roasted seeds bought at the store, coated them with this mixture and roasted them according to this recipe and they turn out just fine. With the alterations, we give this a 5 star rating.

Overnight Blueberry French Toast

As is I give this recipe a 4 star rating, even though my husband doesnt like french toast and he raved about this. For me, it just lacked something. Here is what I did to make it a 5 star recipe...I only used 1 8oz block of cream cheese and sprinkled cinnamin/sugar on top of the top layer of bread cubes. Then for the egg mixture, I used the eggs as called for and instead of milk, I used 2 cups of vanilla flavored liq coffee creamer and omitted the vanilla extract. I also increased the maple syrup in the mixture to about 1/2 cup.

Kielbasa and Cabbage

Fantastic recipe. Was looking for ways to use cabbage from the garden beside your typical coleslaw. Family loved this, I took some to my mom who immediately asked for the recipe so she could take it to a pot luck dinner that very evening. Thanks for offering this great recipe. I will definately be making it again.

Portabella Nirvana

WOW! That was the first word out of everyones mouths this evening when I served these. I used smaller portobello mushrooms instead of the large ones and doubled the filling recipe to serve more people but did not change any of the ingredients. My daughter said they tasted just like Olive Gardens. I have another stuffed mushroom recipe using sausage that everyone raves about but my husband liked these better. I plan to use the filling recipe to make stuffed zucchini. I will definately be making these mushrooms again though. Thank you for offering the recipe!

Easy Corn Salsa

Great recipe. Our oldest daughter is vegitarian and loves Chipotle's salad with their corn salsa. She was home from college this weekend so I made this for her while we had tacos. It was amazing! I doubled the recipe and we still had none left. Will definately make this again...Can't wait to have fresh corn and peppers from the garden to make this then. Thanks for the recipe Jeannine.

Greek Pasta Salad I

I rate this a 5 giving it the benefit of the doubt. On presentation alone it deserves a 10, very colorful and appetizing. But on taste, there is something missing, I just can't put my finger on it. I followed the recipe exactly except used a orange bell pepper instead of red but that would not have changed the flavor. I agree that letting this set overnight enhances the medley of flavors. I served this with cantelope wedges and some grapes, it makes a nice summertime meal. I will definately make this again. Thank you for offering this recipe.

Chicken Salad

Absolutely wonderful! I did omit the ginger because I did not have any, but that was the only alteration I made to this recipe. Even my husband, who is not a fan of chicken salad, said how good it was and asked for seconds. I served this on a bed of spinach surrounded by sliced cantelope. Very pretty and appetizing presentation. I am planning to take this to a church lucheon soon, I am sure it will be a hit!!. Thank you for offering this recipe.

Best Ever Sausage with Peppers, Onions, and Beer!

WOW! What a great recipe, even my picky eater raved about this and warned me that there better be left overs for him for supper the next night. I served it over garlic buttered penne and it was a huge success. For this, I doubled the amt of tomato paste, but when I make it for sandwichs I do not change anything from the original recipe. I did make it in large quantity for an open house last summer using a big roaster. It was not quite as tasty as making it in the smaller quantity but it still went well and there were no left overs. I have been asked to make it again this summer for another open house. Thank you so much for offering this recipe

Overnight Caramel French Toast

Family loved this!!! I had a hard time getting it done enough in the center though so we ate the edge pieces and then put it back in the oven to get the center ones done. Hubby raved about this and I will say the flavor was absolutely wonderful. I will make this again but probably bake it longer, or maybe cut back just a little on egg/milk mixture. Smooth Sweet Tea

This recipe has made a sweet tea lover out of me. I have never liked iced tea with any flavor or sweetener in it but while in Alabama this past winter visiting family I decided to try the sweet tea, it was okay but after returning home and trying it I decided I would stick to my non sweetened tea. My children however asked my to make sweet tea for them so I tried this recipe and absolutely loved it. It is not too sweet and not bitter at all like some tea is. I will definately be making this repeatedly, especially with summer coming. Thank you for offering this recipe.

WOW!! Great recipe. I will say I have made this according to the posted recipe and we liked it. It is deserving of 5 stars. We loved it though when I replaced the water with g. ale. (I would rate that 10 stars if I could). I doubled the recipe (using g. ale) for our big Daytona 500 party and it was gone almost instantly. I had to make more to get some for myself. This is a wonderful recipe, can't wait to make it on a nice hot sunny day and drink while sitting at the pool. Thank you for offering this recipe.

Guinness® Corned Beef

Great recipe. I only make corned beef once a year on St Patrick's Day but after trying this recipe my family has requested it more often. I do cook it in my slow cooker and it is very tender. The beer and brown sugar flavors mix magnificently. I do use the flavor pkg that comes with the brisket. This recipe is awesome, no need to try any others from now on. Oven-Roasted Asparagus

Although leary about trying new recipes when company is coming for dinner this one seemed perfect with the roast chicken I was making. I am glad I made it, company raved about it. I used frozen asparagus spears because I couldn't find fresh at the local store and really didnt have time to shop around. Even my children liked it. I will definately make this again. Cheesy Meatball Soup

This recipe is very tastey when made according to directions, therefor the 4 stars. I find myself short on time however so here is a variation that I use (we give this variation 5 stars): 1) I use frozen meatballs and frozen mixed vegetables (boil together until veg are tender, 2) I use pkg veg soup mix rather than the bouillon cubes. 3) like another reviewer, I use the queso cheese, 4) I use 1 can diced green chilles (this adds a little kick to the soup), 5) we like thick chowder style soups so I made flour/water thickener to reach the consistancy we like. Kids love this and hubby doesn't complain so it must be good.

Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

WOW!! What a great tip. I will no longer fret about making deviled or boiled eggs again. The shells practically fall off the eggs. Thank you for offering this. I will definitely be using this to boil eggs from now on.

Wake-Up Casserole

This is very tastey and simple. I have found that we like sausage better than ham. I also, as other reviewers have commented, bake the hash browns for about 10-15min to crisp them up some. Also, to save time, while the hash browns are in oven, I scramble the egg mixture until about half-way cooked. Then I only need to bake the dish for about 30 min, not an hour. This is one of our favorite breakfasts. Thank you for offering the recipe.

Chili Dog Casserole II

This is a very simple recipe but just AWESOME!! I have made it a few times now and it deserves 5 stars when made according to posted recipe but but I have found a couple alterations we like better. First, I place shredded cheese in tortilla when rolling up the hot dogs. Second, we like the kielbasa dogs better. And lastly, I top the casserole with a jar of con queso. I serve with chopped onions, sour cream, and crunched fritos. This is a family favorite and that says alot when I have 2 picky eaters. Thank you for offering this recipe.

Easy Honey Mustard Mozzarella Chicken

Oh my goodness!! I will say I made some slight alteration to this recipe but it still gets 5 stars because my husband who is not a fan of chicken even had a second helping of this. I did take the advice of other reviewers and wrapped the chic breast in bacon, then I drizzled already prepared honey mustard over before baking. I did not have mozzarella on hand so used swiss cheese instead. It was fantastic. I will definately be making this again, even for company. Thank you for offering this recipe

Salsa Chicken Rice Casserole

I have made this twice now and my family loves it. The first time I made it according to the recipe. The second time I did alter it slightly with even better results. I was pressed for time so I needed to combine a couple steps. First, I used 2 cups minute rice (uncooked) and mixed it with the soup/salsa mixture (I added about 1/2 can of water to thin down the soups a little). I chopped green onions to use instead of regular onion but I did not mix that with the soups. I layered half the soup/rice mixture, chicken, gr. onion, then cheese, and repeated. I baked this at 300 degrees F for about 2 hour. We liked it better this way, the rice seemed to absorb the flavors more. Thank you for posting this recipe. I will definately be making this again.

Quick Eggplant Parmesan

Wonderful recipe. Very easy and tasty. I did take other reviewers tips and after frying the eggplant, I placed on a baking sheet and spooned spaghetti sauce on and topped with cheese then baked until cheese was bubbly and slightly browned. Family (even my son who is a picky eater) loved it. I served it with left over spaghetti and meatballs and garlic bread. What a hit!!! Will definately make this again. This is the first year we have grown eggplant in the garden but will from now on for sure. Thank you for posting this recipe.
