Turkey Lasagna with Butternut Squash, Zucchini, and Spinach

I mistakingly bought a butternut squash instead of a spaghetti squash so I came here looking for a way to use it. Came across this recipe and absolutely loved it! I am a full time working mom with two young kids so I did the speedy version. I did not make my own sauce, I used Newman's Own Sockaroni sauce. I microwaved the butternut squash whole and then peeled and sliced it into thin slices once it cooled. Next time I will buy frozen spinach and thaw it to speed things up even more. Also, I did not use all of the cheese mixture, the lasagna was plenty big without using all of it and I figured it would cut down on the calories as well. Still turned out wonderfully and I love that this is a much healthier version of traditional lasagna. Thank you for sharing!

Excellent and Healthy Cornbread

This was really good. To up the health factor I used half whole wheat flour, half white and used honey instead of sugar. It was a little more dense due to the WW flour and the color was a little different but overall we really liked it. I love cornbread but hate how bad it is for you so this is a nice compromise.

Rainbow Veggie Chili

Honestly if I could give this more stars I would! We are not vegetarians and my husband was not happy about me making a chili without meat in it but we loved this. I only made a couple small modifications. I used a yellow pepper instead of yellow squash and used a can of diced tomatoes instead of the tomato paste and crushed tomatoes. I also added a little chicken broth as it seemed really thick. I made the healthy cornbread recipe from this site and let the chili simmer while I got that ready, about 30-40 minutes. I am trying to cook without meat a couple of times a week and this will certainly go in the rotation.

Turkey Veggie Meatloaf Cups

These are really good! I followed the recipe exactly except for putting ketchup on half of them instead of bbq sauce. We preferred the ones with ketchup. Really healthy, light meal. I'm planning to freeze some to have for a quick meal.

Holiday Chicken Salad

Really good recipe. I used mayo with olive oil to make it a little healthier and bought one of the roasted chickens at Walmart which worked great and saved a lot of time. My husband and I loved this and will definitely make again.

Chicken with Asparagus and Roasted Red Peppers

Made this last night and was pleasantly surprised with it. Given the ingredients I wasn't expecting anything spectacular but everyone really liked it, the flavors work really well together. I served it over brown rice that I prepared with chicken broth and garlic instead of water. The only change I made was to use a fresh red pepper. The only thing I might do different next time is brown the chicken a little bit before adding the chicken broth. I prefer my chicken that way. Will definitely keep this one on hand!

Roxie's Bran Muffins

These are great! Only made a couple modifications, used applesauce instead of butter and reduced the honey to 1/3 cup to make them even healthier. Still sweet and really enjoyed them! I used Special K high protein bran cereal so they have a little protein in them as well. Will be making these often!

Roasted Garlic Cauliflower

My husband who complained while I was making this because he hates cauliflower actually loved it. Cooked it in my toaster oven as other items were cooking in the oven and it had a nice crispiness to it. Will definitely make again!

Slow Cooker Latin Chicken

Great recipe for a busy day! I did not brown the chicken before placing it in the crockpot, just added the ingredients and let it cook while I was at work. It was in there for about 9 hours so I added more liquid than the original recipe called for. Very versatile recipe, we had it as tacos. But with a little more liquid it would have been great as a soup.

Honey Roasted Red Potatoes

These were really good! I did as some other reviewers suggested and left out the butter and just used a little more honey. I stirred them once or twice while they were cooking. They did take a little longer to cook but I had two things in the oven so that's probably why. Would definitely make again!

Shredded Beef for Tacos

Amazing! If I could give this 10 stars I would. I just put it in the crockpot in the morning and we had a delicious dinner waiting for us when we got home. The only thing I didn't add was the green onions, definitely a keeper!

This is really good. I left out the brown sugar and sunflower seeds because I didn't have any. I used maple syrup instead of honey and put in a little extra since I didn't have the brown sugar. I also used applesauce instead of oil. Delicious, thanks for sharing such a great, versatile recipe!

Tortilla Chicken Vegetable Soup

This is a really good recipe! I did make some modifications, first I used a rotissary chicken from Walmart so I could skip the first step. So instead of using the water from cooking the chicken I used low sodium chicken broth. The second change I made was to use brown rice instead of white. I will probably reduce the amount of rice to 1 cup next time. Lastly, it's a bit confusing because the ingredient list calls for red pepper but the directions say to add "carrots" and doesn't say anything about the red pepper. I had both so I added both in. Turned out delicious! One warning...it is a little spicy so you might cut back on the cayenne pepper if you don't like that but overall a great recipe!

Dark Chocolate Chip Pumpkin and Wheat Muffins

These are pretty good, not as much pumpkin flavor as I was hoping for but I still like them. I love that they are such a healthy alternative. I did make my own pumpkin puree with a jack-o-lantern style pumpkin I had so maybe that's why they didn't have as much pumpkin flavor. Either way, I've enjoyed them and would definitely make them again. Updated 05/20/11-these are now a staple, I keep them around all the time and absolutely love them. I found by upping the amount of pumpkin pie spice and cinnamon they are perfect! I keep them in the refrigerator so they don't go bad and stick them in the microwave for about 10 seconds before eating. Delicious!

Zippy Summer Shrimp

Loved this! Cut back on the red pepper flakes and paprika because we're not big fans of hot stuff. Grilled the shrimp instead of pan frying and it got rave reviews. Will definitely make this again. Thanks for sharing!

Yummy Honey Chicken Kabobs

Absolutely delicious! The only change I made was I used extra virgin olive oil instead of veg. oil because that's all I had. I only let it marinate for about 30 minutes, I think the basting towards the end is more important than the marinating. I used chicken, red pepper, onion, and pineapple. Definitely a keeper!

Quick Quiche

Loved this recipe! Made it last night and the only changes I made were to use whole wheat flour and added a shredded orange pepper. I think the orange pepper worked really well because it added a bit of sweet to the recipe. I also used sharp cheddar cheese instead because that is what I had on hand. My family absolutely loved it and this will certainly go into our rotation. Thanks for a great recipe!

Pineapple Chicken Tenders

My husband and I really enjoyed this recipe. I let the chicken marinate overnight and set aside some of the sauce to pour over the chicken after it was done. (Set it aside before placing it on the raw chicken). I also marinated some green pepper, red pepper, and onion in the sauce and placed those on skewers and grilled them up too. Made some rice to go along with it, nice healthy and light dinner!

Too Much Chocolate Cake

All I can say is AMAZING! I took another reviewer's idea and used peanut butter chips instead of chocolate chips. My husband said it tasted like a big brownie with a hint of peanut butter. I even made it slightly healthier by using reduced fat sour cream, two eggs and two egg whites, and applesauce instead of the vegetable oil. It was incredibly rich and moist, will definitely be making this again.

Grilled Rock Lobster Tails

This recipe was excellent, I didn't use the paprika or white pepper which I'm actually glad I didn't. The lobster had a great grilled taste without really tasting the seasoning. We had never made lobster before, went to the grocery store and they had South African tails that were already butterflied so we bought those. My husband cut them off the shell and just cooked them directly on the grill. My first attempt to cook lobster turned out excellent, thanks for the great recipe.
