Rossi's Sausage Gnocchi

I was going to serve some Italian turkey sausage with a side of gnocchi - both leftovers from last week. I was looking for a recipe for the gnocchi when I found one for both. I had everything on-hand except for the canned tomatoes, but I subbed tomato soup, and it turned out great! This is an excellent recipe to use up last weeks groceries or for when you have a lot of company - it's so easy to make.

Egg Sandwich

Easy to make, even easier to clean up. Perfect for when you're feeling lazy or of you're low on time. But the bread did get soggy when microwaving it to melt the cheese. I would try toasting it if you have the time. Also, I had to sauce it up - I just didn't nuke the top piece of bread with the rest.

Perfect Baked Potato

The potato was baked well enough, but all of that salt that I rubbed on the skin was disgusting. I'm not sure what the salt rubbing does, but definitely don't use as much salt as the recipe calls for - or even half of that. Use your salt shaker to keep it light.

Buttery Cooked Carrots

I also steamed the carrots (without retaining any water), and they were delicious. I feel that the side dish would have felt heartier with regular (not processed baby) carrots instead, however.

Lime Garlic Chicken

I had to cook the chicken for way longer than the recipe called for, but once it finally finished, it was great. I would recommend cutting the chicken breasts into smaller pieces, so they cook faster.

Black Bean and Corn Quesadillas

This was my first time making any sort of quesadillas, so I was very impressed with the way they turned out - delicious. The only problem that I had was that, for turning as well as eating purposes, the two tortillas didn't seem to stick together. I would recommend using a lot more cheese than the recipe calls for. Once the tortilla is on the griddle, I'd put a layer of cheese, bean/corn mixture, another layer of cheese, top with tortilla.

Oven Potato Wedges

I thought that these potato wedges were easy and delicious. Mine, however, looked absolutely nothing like the picture. Also, I think that they could have cooked for a little longer: I bit into a couple of wedges that were not done yet.
