Ultimate Twice Baked Potatoes

Chinese Chicken Fried Rice II

This was really good! I followed the recipe for the most part, but also added some extra stuff that I had... peas, carrots and beans cooked frozen veggies and chopped cooked mushrooms. I also used leftover rotisserie chicken for the chicken. We really liked this! It was very good. I did enjoy the extra veggies because it was a good, easy way to get those into our meal!

Chicken Sandwiches with Zang

Since we don't have a grill, I made this in a skillet. I coated the skillet with Pam, put seasonings on the chicken and then seared it on both sides. Then I started spreading BBQ sauce on it every time I flipped it - about every 5-6 minutes. I did kinda eye the seasonings instead of measuring them out and used a "bold" BBQ sauce. It took about 18 minutes on medium heat in my skillet to cook through using medium-sized chicken breasts. I toasted the buns in the oven for a few minutes, then put on the chicken and cheese (used provolone because that was all I had) and put back in the oven for about 2 minutes until the cheese melted. Then I topped with the onions and mushrooms (didn't use bell peppers because we don't like them and I didn't have them). Hubby and I both really enjoyed this sandwich. We served it with homemade fries and cut up apples.

Cocktail Meatballs I

I took these to a baby shower this weekend and everyone raved. I used a 2.5# bag of frozen meatballs and doubled the sauce recipe. It all fit in my crockpot. I did have quite a few leftovers. I probably could have just done the original recipe size and they would have all been gone.

Molten Chocolate Cakes With Sugar-Coated Raspberries

I made these for Valentine's Day. They were quite easy and extremely tasty! I made the batter earlier on in the day and we just put them in muffin cups and stuck them in the oven when we were ready for dessert. They are also good warmed up later in the microwave. I served them with raspberries coated in sugar and Cool Whip. I pretty much followed the recipe and it was great.

Blue Cheese Crusted Filet Mignon with Port Wine Sauce

Hubby and I made this together for Valentine's Day. We pretty much followed the recipe except we increased the cooking time because our steaks were rather thick and we wanted them closer to medium well. I also had to use regular bread crumbs because I forgot to buy panko bread crumbs and my homemade ones burned in the oven (I forgot about them!). We really enjoyed it- just need to work on our cooking steak skills some more.

Clone of a Cinnabon

These are AWESOME! I struggled some with rolling up the dough, but I followed some of the tips that I found in the reviews which helped. I made these for Valentine's Day breakfast and they were simply great! I need to work on my technique with rolling up the dough, but they turned out good regardless. Thanks for such a great recipe!

Strawberry Muffins

These are quite good! I cut up a whole container of strawberries to use in this. I did do the 1 1/4 cup whole wheat flour and 1/2 cup all purpose flour. I also added 1/2 tsp cinnamon, 1/2 tsp vanilla and 1/4 cup brown sugar. I also substituted applesauce for the oil. They turned out quite moist and had a good flavor!

Slow Cooker Italian Beef for Sandwiches

Hubby and I really liked this! The meat has an awesome flavor!! I used a chuck pot roast per one of the reviews and also because it was on sale this week. I used the seasonings for a 5 lb roast even though ours was only 2.8 lbs. It was great to be able to leave it all day and then have it pretty much ready for dinner when we got home! We served it on hoagie buns with provolone cheese broiled briefly in the oven. We will definitely make this one again!

Easy Apple Coleslaw

Made this with a bag of "broccoli slaw". Hubby and I both liked it. I also slightly increased the brown sugar and slightly decreased the mayo according to our tastes. I will definitely make this again.

Anniversary Chicken I

I made this for company this weekend. It was very good. I used an all-purpose teriyaki marinade and cooking sauce. I used light ranch dressing and put the cheese and bacon and green onions on about halfway through the cooking time. It was very good.

Baked Pesto Chicken

This was quite good! Of course we love pesto! I used the reduced fat pesto sauce and used a spoon to smother it on there. Then I used a mixture of bread crumbs and Italian seasonings to bread the chicken. We both enjoyed it a lot.

Brazilian White Rice

This was a good twist on the typical white rice. Hubby and I both really liked it. I followed the directions for the most part. The only change I made was to use dried minced onion and I added that with the salt and rice. It was very moist and had a good flavor. I will probably make this again.

Slow Cooker Chicken Stroganoff

We weren't the biggest fans of this. I did use the whole packet of Italian dressing and I'm glad that I did because I think it would have been very bland without it. It was fine, just not probably something that I'd make again. I think it's simply one of those things that didn't suit our tastes very well.

Szechwan Shrimp

This was AWESOME! I added a bag of broccoli (fresh but cooked in the microwave) and used uncooked shrimp. I tripled the sauce (next time I might do 4x the sauce) except leaving the ginger the original amount and using 1/4 tsp crushed red pepper (we're wimps when it comes to spicy things). This made two very generous servings.

Gourmet Chicken Pizza

I'm giving it 4 stars, but the way I made it I only give it 3 stars. I left out the green onions and used a mixture of cheese instead of the specific ones listed. I did add some Italian seasoning on top of the ranch dressing. We thought it was fine, but we prefer other pizzas over this one. So, we'll probably not make this one again... a little too far from a typical pizza for our tastes.

Simple Time Pork Chops

Key Lime Pie VII

This was pretty good. I did use only 2 cans of condensed milk (which was about 2 1/2 cups). It turned out fine. I might reduce the key lime juice next time since I used slightly less condensed milk. The pie was very full but there wasn't any extra filling. This was definitely a quick and easy recipe and tasted quite good as well!
