Mongolian Beef Crockpot

Mark really liked this. I thought it was fine, but I don't really like Mongolian Beef that much. So, I'll probably make it again sometime for him. We got about 3 generous servings out of this.

Taco Turkey Wraps

I made this for lunches for a week. I used light sour cream and homemade taco seasoning. I did add lettuce and tomatoes. It was very good. Hubby also really liked these. They are quite filling.

Blueberry Pancakes

These were quite good. I used vanilla fat free yogurt, fat free milk and fresh blueberries. I made the 4 serving size (original recipe size) of this and it only fed two hungry adults (about 5 good size pancakes).

Salmon with Lemon and Dill

The recipe is fine. I think that I just don't really like dill or lemon with main dishes very much. My hubby liked it and thought it was good. So, if you like lemon & dill, you'll probably like it.

Crockpot Brown Sugar Chicken

We liked this decently, not awesome, but still good and rather easy. I made it with boneless skinless chicken thighs and I definitely think that's the way to go on this recipe. I did make a 1/2 recipe.

We really liked this. I only added 1 tsp Cajun seasoning and next time I'm thinking I'll maybe add 1.25 or 1.5 tsp. It was quite good.

Spinach and Feta Pita Bake

I really loved this one. I pretty much followed the recipe- just adjusting it slightly to make it healthier. I piled on the veggies. Then I used reduced fat pesto and reduced fat feta cheese. I used a little less than what was called for for the pesto and olive oil. It was an easy meal to size down for 1 person and it was very filling. I will definitely be making this again soon- maybe even next week!

Shrimp and Feta Cheese Pasta

This was really good. It had more flavor than I expected. I added about 1/3 cup white wine and doubled the spices, but I only used the called for amount of tomato. Next time I think I'll double the tomato also and make a little more sauce as well. Definitely a keeper!

Chocolate Chip Cookie Dough Brownies

Made these for a group potluck. I used RTB cookie dough and a Duncan Hines brownie mix. I frosted them with Betty Crocker chocolate chip chocolate frosting. They were very good!

Amy's Delicious Turkey Burgers

These were pretty good. I omitted the red pepper flakes (we're not spicy fans) and I followed the recipe besides that. Next time I think that I might use real chopped onion instead of dried to add some more flavor. I also added a sprinkle or two of worcheshire sauce (because it's sooo good). Definitely pretty good and I'll make them again.

This was VERY good! It did have a strong taste... may want to omit kosher salt and/or put less rub on the steaks and/or use salt-free garlic & herb mixture instead of some of the other seasonings. Yay, I was finally able to get steaks to medium like I love!

Raspberry Lemon Muffins

This is pretty good. I pretty much followed the directions except I did use a lemon chiffon flavored yogurt and added some extra lemon juice and extra sugar. It didn't have a very strong lemon flavor, but they're still pretty good. It's a different kind of muffin, but good. I'll probably make it again.

Slow Cooker Pulled Pork

Hubby & I really liked this. I used a 4# Boston Butt (pork shoulder roast) per some of the other reviews. I also used Sweet Baby Ray's BBQ sauce. We served it on toasted buns with corn and tater tots. I let the roast cook for about 10 hours while I was at work. Then I drained it and shredded it and added the BBQ sauce and let it cook for about another 1 1/2 hours or so. We will definitely make this again!
