Chocolate Chip Coffee Cake

Excellent recipe. Had an extra fancy bag of chocolate chips on hand and wanted to do more than a cookie...Perfect! Cake was moist, buttery and delicious. I wanted a crumb topping on mine and made a simple one of flour, butter and brown sugar and put half the cinnamon in the cake batter and the other half in the crumb topping. Would be equally delicious without, however. Making again for ladies brunch later in the week. Truly a prize winning recipe and a KEEPER for sure! Well done!

Shrimp Scampi

Another solid recipe...quick and easy. Many thanks. Perhaps the reviewers that found this on the bland side are not adding salt? You simply cannot cook a protein without it and expect it to taste good. I would suggest to cut down on the parmesan at the end and salt/pepper your meats, fish, fowl while sauteing. Even if not included in the recipe always remember to salt, Kosher salt is preferred. You would not bake a cookie without it so you should never cook without it...it brings out the flavor in everything.

Meatloaf with Fried Onions and Ranch Seasoning

A very good recipe...Very quick and easy preparation. Thank you for submitting it. To the gentleman in Bangkok and others of the same opinion...this is a recipe review, not a blog. It is designed for the use of busy people looking to put a meal on the table. If it is not your particular cup of tea you should look elsewhere and in periodicals such as Saveur, Gourmet, Bon Appetit, etc. I really wish people would stop using this review box as a personal podium to discount it's intended purpose...this isn't politics! It's a recipe swap. That's all!

Green Chile Frittata

Very good, simple recipe. I am always looking for a great brunch dish...that it incorporates chiles is a bonus. I would not call it a fritatta, though, it is more quiche-like, or strata-like in nature...minus the crust or bread, of course. Truly a great recipe. Thanks!

Killer Shrimp Soup

I've had a yen for Killer Shrimp and the lesser known (and now defunct) Bourbon Street Shrimp on Melrose. This recipe was a great place to start. I peeled the shells and tails from the shrimp. I "sweated" about a cup of minced celery (including leaves) and minced onion until transluscent and then a few cloves of minced garlic and sauteed for a few minutes. I added the shells and tails, chicken broth, wine, 2 tablespoons of tomato paste, lots of rosemary and fennel, salt and pepper, a good tablespoon or two of Tabasco and a bay leaf and simmered all day. I poured everything through a mesh sieve discarded solids and whisked in 3 tablespoons of butter at the end before adding the shrimp. I am delighted with the result and cannot wait to tweak it again in the very near future or whenever Henry's puts these huge shrimp on sale again! Thanks for the recipe!
