I love being outdoors and being active! I also love to read, sing, play, LIVE, and spend as much time as I can with my 3 beautiful (crazy..) kids (12 yr old and 3 1/2 yr old sons and 4 month old daughter) and incredible husband. :D
My favorite things to cook
I'm a huge fan of Asian and European foods! My favorite foods tend to be of Greek & Mediterranean influence.. Mmmm.. writing this is making me hungry.. But, as a mom of 2 young kids, I try to make meal time as easy, healthy, and kid friendly as possible. Unless, of course, I'm cooking for guests. :D
My favorite family cooking traditions
I don't have any traditions, per se, but I am a flexitarian (primarily vegetarian) and the hubby and kids are "mostly-vegetarians" because I'm the primary cook at home. :D If it were up to mu husband we would be carnivores, though! Ha ha.. We also prefer to use organic and whole, natural foods as often as possible.
My cooking triumphs
My very first Thanksgiving cooking on my own was a HUGE success and I was so proud of it!! I credit much of my cooking success to my mother's teachings.. She's an amazing cook and taught me a lot growing up. And, although I cook very differently than she does, I would have never had the interest or love of cooking without her.
My cooking tragedies
Ah, yes. The infamous 'Tarragon/Turmeric Mashed Potato Incident'. I will never live it down. The recipe called for 1 tsp tarragon; I added 1 tbsp turmeric instead. Yeah. The potatoes were nuclear orange and had one hell of a bite! Ha ha ha..

Chewy Chocolate Chip Oatmeal Cookies
I have made this recipe a dozen times and they are the closest thing to the perfect chocolate chip oatmeal cookie I've ever had! They are my go-to - without fail, they are moist, slightly crispy around the edges, and full of flavor. The only slight modifications I make are as follows: I don't ever buy white flour or white sugar so in their place in the recipe I use raw sugar and unbleached 100% whole wheat flour (I'm partial to King Arthur brand). I also halve the salt to 1/2 tsp and because I like a cookie that's not 'fluffy' I leave the flour and baking soda as is even though many reviewers add more. Perfection! I eat a whole food, primarily plant based, minimally refined, minimally processed, diet most of the time.... but every once and a while you just have to have a "splurge" item and these cookies are absolutely it for me. Yum! Thanks for a great recipe!

Slow-Cooker Chicken Tortilla Soup
This was absolutely delicious! I did make a few very minor changes but this would still be amazing if made as is.. 1. I added 1 can of rinsed red kidney beans. 2. I did not add any salt to compensate for all of the sodium in the canned goods. 3. I used tortilla chips I already had. 4. I put 2 raw chicken breasts in, cooked on low for 4 hours, took them out and chopped them and then threw them back in. So, the flavor of this was incredible. It is most definitely a keeper and I WILL be making it again. The whole family loved it. Oh, and don't forget the avocado, cheese, and sour cream or plain Greek yogurt (healthier and just as yummy..) when serving! WOW, totally kicks the flavor into high gear! I added some diced avocado, a sprinkling of sh. cheddar and a T plain Greek yogurt to the top once in the bowl - divine!

Fluffy Pancakes
These pancakes are pretty much perfect. They are so fluffy, I was really surprised when I poured the batter on the pan and I was afraid they wouldn't cook through before browning but they did great! I kept the heat on medium, though, and started heating the pan as soon as I started mixing the ingredients. Also, I used vegan butter instead of regular butter but they were still fantastic! This is seriously my go-to pancake recipe from now on.
