Goat Cheese Salmon
Easy - Wonderful - Tasty. Made my own Dijon mustard mayonnaise blend which allowed me to make it to my taste (and cut back on fat/calories by using low fat mayo). Served this with a jasmine rice as suggested. Modified the rice by adding saffron and peas. YUMMY. This is a quick and easy weeknight dish. TRY IT, You will love it.

Renaissance Stuffed Mushrooms
This was very flavorful and I'm so glad I read the reviews first!! Thanks to all who told me there would be a lot of stuffing leftover. I used the extra to go inside my salmon puff pastry entree. It was incredibly good and the flavor was completely different than with the mushrooms. No stuffing was wasted.

Puff Pastry Roll
I thought this recipe was good, however, I seem to always modify even the best recipes. I added garlic and red,yellow, orange peppers to the chicken while browning. I also added dijon mustard to the chicken/bread crumb mixture for that extra kick of flavor. All in all, pretty good.
