Tofu Parmigiana

Tasty! I baked the tofu instead of frying per others suggestions, however I did not freeze the tofu. I will definitely try this next time to give the tofu a better texture. I also had shredded mozzarella and I think to make it extra delicious, I will used sliced next time.

Fried Sweet Potatoes

Tasty! Will be using this method regularly for sweet potatoes. With just me and my husband, I used one big sweet potato, cut into fours to boil and then cubed before frying. I used about 2T brown sugar and 3T butter

Salsa Chicken

Very Good! Tastes like it should be so much work, but really quite simple! I used what I had on hand. For the salsa I mixed- RoTel (lime and cilantro), Pace medium salsa, Sliced black olives, and some minced garlic. Served it over 90 second Spanish rice.

Monterey Chicken Fajitas

Delicious & Simple! I used the Medium Pace and seasoned the chicken with a cayenne spice mix for extra heat. I will be using this recipe again!

15-Minute Marinated Chicken

My fiancee and I love this chicken dish. We have it about once a week. I sometimes use tenderloins instead of breasts and usually bake it at 375 for 20-30 minutes. We like to pair it with Asparagus (salt, pepper & fresh lemon juice) baked at 375 for about 7 minutes
