Ratatouille Bake

I put this together about 3 hours before I baked it, and it still turned out really well. Had never had Ratatouille before and wasn't sure to expect, but we were all pleasantly surprised. Was out of the seasonings it called for, so used 3/4 of a Tablespoon of Italian Seasoning instead. We will eat this again.

Taco Seasoning II

My husband and I found this recipe quite bland. I browned the beef, then added the 7 teaspoons of the seasoning and added about a half cup of water, and let it simmer for about 30 minutes so the flavors could mingle. I liked that it had no salt, but I would like a recipe with more flavor. It very minimally seasoned the beef.

Baked Penne with Italian Sausage

I made this exactly as written, and it was just okay. Probably a one timer for us. Basically a spaghetti sauce tossed with noodles, I felt I could had the same result with a jar of spaghetti sauce and not had to clean any pans :)

Chicken Enchiladas I

I LOVE this recipe--It's one of the only ones I crave! It's easier if you use CANNED chicken! First I saute the onions and garlic (and green pepper if I'm using it, but I usually leave it out) in olive oil until tender, and instead of cooking the chicken, I make it easy on myself and drain 1.5 - 2 cans of cooked chicken and take a fork to it, shredding it, then adding to the onions. I cook it a little with the onions to get the chicken a little flavor, then add the sour cream and cheese and let the cheese melt. Next I add the other ingredients (minus the water--it makes it too runny) and simmer as long as possible. TIP: You can use 8oz oz of salsa instead of tomato sauce/green peppers. When I do this, I cut the chili powder down to 2 teaspoons because the spice becomes overpowering with the added spice from the salsa. Seriously LOVE this recipe! I also use Ortega Mild taco sauce and Mexican blend cheese instead of cheddar.

Chuck's Favorite Mac and Cheese

This is a very "grown up" mac & cheese (but not so grown up that the kdis don't enjoy it--it IS mac & cheese!) Quite yummy! I use Italian bread crumbs, and instead of the sour cream, I use a pint of ricotta and one egg, as in more traditional italian cooking. This is a great quick fix, and an even better freezer meal to pull out on busy night--I'll actually be taking it to Thanksgiving this year.

Sloppy Joe Sandwiches

We LOVE these! I double the recipe to feed my family of 5, do as some other reviewers suggested: I increase the brown sugar to 3 T and added a t of white vinegar and 1 t of chili powder. This is served nearly once a week at our house, sometimes with ground Turkey instead of beef, and even my 3 kids under 7 eat it and love it, which was big praise to me because they are tough critics!

Baked Orange Roughy Italian-Style

This is a great recipe. I have used it with several white fish, and it always tastes good. I sometimes add a little more cheese, but just because we like it. A great match with steamed asparagus. This made it into our family recipe book as is--it's great!

Baked Teriyaki Chicken

This is a great recipe, but I did follow some other reviewers suggestions to make it a 5, otherwise it would be a 4. Doubled the garlic, used brown sugar instead of white, and low sodium soy sauce. This has become a staple in the recipe rotation at my house. Served with broccoli and white or brown rice, depending on what we have. This is a meal that everyone in my house will eat, and it's hard to please 5 people at the same time! My 4 year old loved this, and he doesn't like anything except Mac & Cheese so it was definitely a compliment. Thanks for a great recipe!

Broccoli Cheese Soup V

Very good--my 4 year old requests it! It makes way too much for our family of 5, so we scale it down or freeze some for a rainy day then just reheat on the stove. I followed other users advice and used half velvetta and half cheddar, next time I may even go with more cheddar--I'm not a velvetta fan but this was still really good. I'm after Panara's recipe, but this is pretty close!

Grilled Sausage with Potatoes and Green Beans

This is a great recipe! Our family of 5 eats this at least every other week. I heat olive oil in a skillet, then add the garlic. Then I saute the onions until tender, then add 2 cans of green beans and let them cook a little bit to take on the flavor. I add the potaotes & sausage as I cut them, then add 1/2 a cup of water and some black peper, stir and move to the 400 degree oven for 45 minutes--there are never any leftovers!

Chocolate-Zucchini Cupcakes

Fantastic! My kids had no idea there was zucchinni in them at all! :) As per other reviews, I doubled the chocolate and used 3/4 cup applesauce & 1/4 cup oil. I din't have baking chocolate, so I used cocoa powder (2T unsweetened cocoa powder & 1 T vegetable oil for each chocolate square, and I used whole wheat flour. I will definitely use these again, and would even make them more frequently because it's a treat I can feed my kids that's special, yet more nutritious. I did use chocolate icing with sprinkles, but lightly--just enough to make the sprinkles stick. **update** These are also good without icing on top as just plain chocolate muffins! We now make these about once a month, freezing half for later in the month, and eat them as muffins for snack or desert. Wonderful recipe!

Incredibly Cheesy Turkey Meatloaf

My husband didn't even know it was Turkey! We thought this was very good, and even my kids (6 & 4) asked to have it again. I only had regular bread crumbs, but tried to make up for the flavor by adding fresh garlic to the milk and letting the breadcrumbs soak in it before adding them to the meat mixture. I also added parsley and half an onion, choppped fine, to the meat mixture. Next time I will add more onion and more bread crumbs. As it was, it fell apart easily (which I like) but my husband would prefer more of a loaf. Very good! Will definitely use this again!
