Easy Dinner Hash
Cooked recipe tonight. Served with eggs. Husband loved it!. Cooked onions, sausage and chopped celery together. Added potatoes as recipe said. One thing I did was I cooked the mixed vegetables in microwave cook bag before I added them. Added them along with any water that cooked out of them. Turned burner down and covered and steamed a little. Added a little season salt and pepper. Before serving added cheese. Was moist and flavorful! Husband said he wanted to eat it again! Got a hug and he said that was good, which normally does not happen when I cook something!

Summer Zucchini Casserole
This is a great recipe! I diced the zucchini and cooked it, onions, & carrots in butter. Then, I mixed all the ingredients together (even all of dry stuffing mix) and put it all in the pan at once. I did not layer it. The casserole came out of the oven with a golden color (from carrots) and green speckled (very attractive look). Tasted wonderful. It is the best zucchini casserole that I ever tasted. I plan on adding diced chicken the next time I make it (which will probably be this week). Picking zucchini everyday from garden.

Scrapple
Tried this recipe using venison sausage. Great! I am originally from Pennsylvania and ate scrapple many times as a kid. Recipe is close to original scrapple. It is sweet so I did not need to pour syrup on it. Great Recipe! Husband said it is a keeper!
